**Athenian Fish: A Journey Through Greek Flavors**

Embark on a culinary voyage to the heart of Greece with Athenian fish, a delightful dish that captures the essence of Mediterranean cuisine. Prepared with tender fillets of mild white fish, this recipe showcases the vibrant flavors of Greece, using a harmonious blend of herbs, citrus, and aromatic spices. The article presents two variations of this classic dish, each offering a unique take on the traditional recipe.

The first recipe, **Classic Athenian Fish**, takes you on a journey through the simplicity of Greek flavors. Fresh herbs like parsley, dill, and oregano dance together in a symphony of aromas, while lemon juice adds a refreshing tang. Garlic and onion provide a savory base, while a touch of white wine enhances the overall complexity of the dish.

The second recipe, **Athenian Fish with Spicy Tomato Sauce**, adds a vibrant twist to the classic dish. A tantalizing sauce made from ripe tomatoes, fiery chili peppers, and aromatic spices brings a delightful heat to the tender fish. The addition of capers and olives adds a layer of briny, salty notes that balance the richness of the sauce.

Both variations of Athenian fish are easy to prepare, requiring minimal effort and time, making them perfect for busy weeknight dinners. Served alongside a bed of fluffy rice or roasted vegetables, these dishes promise a taste of the Mediterranean that will transport you to the sun-kissed shores of Greece.

ATHENIAN FISH (20 MINUTE MEAL)

Athenian Fish (20 Minute Meal) image

A low calorie and SPEEDY recipe from Family Style Spring 2009, a Publix Publication. They say tilapia, snaper or mahi mahi all provide great results; I made it with grouper and that worked well. They also recommend serving with a salad of cucumbers, tomatoes and feta along with some pita bread and hummus.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 10

4 tilapia fillets, thawed (1-1.5 pounds)
1/2 teaspoon lemon pepper
1 teaspoon all purpose Greek seasoning, divided
1 tablespoon extra virgin olive oil
1 tablespoon minced garlic
1/4 cup diced onion
1 (14 ounce) can quartered artichoke hearts (drained)
1 (14 1/2 ounce) can diced tomatoes (drained)
1/2 cup white wine
2 tablespoons sliced black olives

Steps:

  • Preheat large saute pan on medium-high for 2-3 minutes.
  • In the meanwhile, season both sides of the fish fillets with pepper and 1/2 t of the Greek seasoning. Wash your hands.
  • Place oil in pan; swirl to coat. Add garlic and onion; cook 1-2 minutes until onion is soft.
  • Add fish fillets (wash hands). Top fish with remaining ingredients (including remaining 1/2 t Greek seasoning).
  • Cover and cook 8-10 minutes, stirring veggies once. Cooking time will depend on the thickness of the fish. . .fish is done when it has an internal temperature of 145 degrees and flesh is opaque and separates easily with a fork.

Tips:

  • Use a sturdy fish: Athenian fish is a very simple dish, so it's important to use a fish that can stand up to the heat and flavor of the marinade. Good choices include swordfish, tuna, halibut, or salmon.
  • Marinate the fish for at least 30 minutes: The marinade helps to flavor the fish and keep it moist. If you don't have time to marinate the fish for 30 minutes, you can still make the dish, but the flavor will be less pronounced.
  • Cook the fish over medium-high heat: This will help to sear the fish and keep it from sticking to the pan. If the heat is too low, the fish will cook slowly and may become dry.
  • Baste the fish with the marinade while it's cooking: This will help to keep the fish moist and flavorful. You can also add a little bit of olive oil or butter to the pan to help prevent the fish from sticking.
  • Serve the fish immediately: Athenian fish is best served hot off the grill. It can be served with a variety of sides, such as rice, potatoes, or vegetables.

Conclusion:

Athenian fish is a quick and easy dish that's perfect for a weeknight meal. The marinade is simple to make and the fish cooks in just a few minutes. This dish is also very versatile and can be served with a variety of sides. So next time you're looking for a simple and delicious seafood dish, give Athenian fish a try.
