1/3 cup milk
1/2 cup chopped onion
2 tablespoons all-purpose flour

  • In a large bowl, combine the first six ingredients. Crumble sausage over mixture and mix well. Shape into six patties. , In a large skillet, cook patties over medium heat for 6 minutes on each side or until meat is no longer pink, turning occasionally. Freeze option: Prepare uncooked patties and freeze, covered, on a plastic wrap-lined baking sheet until firm. Transfer patties to a resealable plastic bag; return to freezer. 1 pound ground pork
1 garlic clove, minced
1 tablespoon dried sage, crumbled
3/4 teaspoon dried thyme
1/2 teaspoon dried fennel, crushed
Pinch of ground nutmeg
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground black pepper
1 large egg white
2 teaspoons vegetable oil

Steps:

  • Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
  • To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
  • Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. BREAKFAST SAUSAGE
1 tablespoon cold water
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon dried sage
3/4 teaspoon dried marjoram
1/2 teaspoon dried savory
1/8 teaspoon dried thyme
1/8 teaspoon ground nutmeg
HOT ITALIAN
2 tablespoons grated onion
1 tablespoon dry red wine
1 tablespoon minced parsley
1 teaspoon kosher salt
3/4 teaspoon paprika
3/4 teaspoon crushed fennel seed
1/2 teaspoon crushed red chile flakes, more to taste
1/4 teaspoon freshly ground black pepper
1 medium clove garlic, minced
SPANISH CHORIZO
1 tablespoon dry white wine
1 teaspoon kosher salt
2 tablespoons sweet smoked paprika (pimentón dulce-or use half sweet and half hot)
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon crushed fennel seed
1 medium clove garlic, minced
Extra-virgin olive oil, as needed
More kosher salt, as needed

  • You can make the sausage up to a day ahead of time. Store it covered in the refrigerator, but let it come to room temperature before cooking.

It's important to keep all ingredients cool; otherwise, the fat will melt into the meat. The ideal for this is to use a stand mixer with the paddle attachment; rinse the bowl and attachment in icy-cold water to chill them first. But you can also use your hands, as long as you keep them cool (I dip mine in an ice bath).

Kosher salt
1 teaspoon chile flakes
1 teaspoon fennel seeds, toasted
1/2 teaspoon cayenne pepper
1/2 cup breadcrumbs, toasted
1/2 cup finely grated Parmesan
1 tablespoon canola oil
2 to 4 tablespoons unsalted butter
4 to 6 eggs

Steps:

  • Put the meat in a large bowl and mix together with your hands. Add a good pinch of kosher salt, the chile flakes, fennel seeds, cayenne, breadcrumbs, and Parmesan. Mix to blend and then form the meat into small 2-inch patties.
  • Heat the canola oil in a large skillet over high heat. When the oil begins to smoke lightly, shut off the heat to avoid splattering, and add the meat patties in a single layer in the pan. Take care they are spread somewhat apart so they have a chance to brown instead of steam. Put the heat back on high and brown them, turning them so they brown all around, 3 to 5 minutes on each side. Touch them to make sure they are still tender and somewhat yielding in the center. Use a slotted spoon or spatula to remove them from the pan. Transfer the patties to a platter or individual plates.
  • Use a kitchen towel to wipe clean the skillet, put the heat on medium, and add the butter. When it begins to brown, crack 2 eggs, a distance apart, into the butter. Lower the heat, season the eggs lightly with salt, and cook 2 to 3 minutes or longer, if desired. Repeat with additional eggs. Put the eggs on the patties and serve immediately.
