1/4 cup all purpose flour
1/4 cup (packed) golden brown sugar
3 tablespoons unsalted butter, room temperature
1/2 teaspoon ground cinnamon
For cake
Nonstick vegetable oil spray
1 1/2 cups all purpose flour
1/4 cup (packed) golden brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsweetened applesauce
1/3 cup low-fat buttermilk
2 tablespoons vegetable oil
1 large egg yolk
1 teaspoon vanilla extract
1/2 teaspoon (packed) grated lemon peel
2 large egg whites

Steps:

  • Make topping:
  • Preheat oven to 350°F. Combine all ingredients in small bowl. Mash with fork until blended and coarse crumbs form. Set aside.
  • Make cake:
  • Spray 9-inch-diameter cake pan with 1 1/2-inch-high sides with vegetable oil spray. Sift flour, sugar, baking powder, baking soda and salt into large bowl. Whisk applesauce, buttermilk, oil, egg yolk, vanilla and lemon peel in medium bowl until well blended. Add to dry ingredients and stir just until moistened (batter will be thick). Beat egg whites in another large bowl until stiff peaks form. Whisk half of whites into batter. Fold in remaining whites.
  • Transfer batter to prepared pan. Sprinkle topping over batter. Bake cake until tester inserted into center comes out clean, about 30 minutes. Transfer to rack; cool in pan. Cut into 10 wedges and serve.

12 tablespoons (1 1/2 sticks) unsalted butter, softened
1/2 cup packed dark-brown sugar
1/4 cup old-fashioned rolled oats
2 3/4 teaspoons ground cinnamon
1 teaspoon salt
1 1/2 cups chopped toasted pecans
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon freshly grated nutmeg
1/8 teaspoon ground cloves
1 cup granulated sugar
1/2 cup packed light-brown sugar
4 large eggs
Apple-Cider Applesauce or 1 1/2 cups store-bought applesauce
2 small juicy apples, such as McIntosh, peeled, cored, and cut into 1/4-inch-thick wedges

Steps:

  • Preheat oven to 350 degrees. Coat a 10-inch angel-food-cake pan with cooking spray; set aside. Make crumb topping: Stir together 4 tablespoons butter, the dark-brown sugar, oats, 3/4 teaspoon cinnamon, and 1/4 teaspoon salt until smooth. Stir in 1/2 cup pecans; set aside.
  • Make batter: Sift flour, baking soda, nutmeg, cloves, and remaining 2 teaspoons cinnamon and 3/4 teaspoon salt; set aside. Put remaining 8 tablespoons (1 stick) butter, the granulated sugar, and light-brown sugar in the bowl of an electric mixer fitted with the paddle attachment. 3/4 cup cinnamon applesauce
1/3 cup pasteurized packaged egg whites
1 teaspoon pumpkin pie spice
1/2 teaspoon almond extract
1/4 cup baking mix (recommended: Bisquick)
2 tablespoons brown sugar
3/4 cup chopped walnuts
1 (.74-ounce) packet spiced cider drink mix (recommended: Alpine)
1 tablespoon butter, melted
Whipped topping flavored with vanilla extract, for serving

Steps:

  • Lightly spray a 6-cup souffle dish with butter-flavored cooking spray and set aside. Make a foil ring 1/2-inch thick for souffle dish to sit on and place inside the bottom of a 5-quart slow cooker.
  • In a large bowl, combine cake mix, applesauce, eggs, pumpkin pie spice, and almond extract. Using an electric mixer beat on low speed for 30 seconds. Scrape down sides of bowl and beat for 1 minute on medium speed. Pour into souffle dish and set aside.
