2 cups sugar
3/4 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1-1/2 teaspoons baking soda
1 teaspoon salt
3 cups finely chopped peeled tart apples
TOPPING:
2 tablespoons butter, softened
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 cup sweetened shredded coconut
1/3 cup chopped walnuts

Steps:

  • In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, cinnamon, baking soda and salt; gradually beat into sugar mixture (batter will be thick). Fold in apples. Spread into a greased and floured 13-in. x 9-in. baking pan. , For topping, beat the butter, sugar and cinnamon in a small bowl. Stir in coconut and walnuts; mix well. 4 large eggs, room temperature
2/3 cup canola oil

1 cup confectioners' sugar

1 to 2 tablespoons water
