GLAZED CARROTS

A spicy ginger beer and chili glaze elevates this simple carrot side dish. When it comes to pairing carrots with other flavors, I like keeping it in the same botanical family. That's because the carrot and its cousins celery, parsley, caraway, dill, and fennel all share a unique flavor compound: Petroselinic acid. By seasoning carrots with, say, fresh parsley, not only can we build a portfolio of contrasting flavors, the intensity of the carrot flavor itself is amplified...that's right...to 11!This recipe first appeared in Season 8 of Good Eats.

I recently found this on Facebook - I'm an Alton Brown fan. It sounded really good - guess what - it is! I lowered the chili powder and adjusted the cooking time, it took longer to glaze than he suggested, maybe because I'm high altitude.

Tips:

  • Select the right carrots: Choose medium-sized, young carrots with vibrant color and no blemishes.
  • Peel and trim the carrots evenly: This ensures uniform cooking and a more appealing presentation.
  • Use a flavorful cooking liquid: Alton Brown's recipe uses a combination of chicken broth, water, honey, and spices, which infuses the carrots with a delicious savory-sweet flavor.
  • Glaze the carrots until tender and caramelized: Cook the carrots in the flavorful liquid until they are tender-crisp and the glaze has thickened and reduced, coating the carrots in a glossy sheen.
  • Add fresh herbs or citrus zest for a pop of freshness: Chopped parsley, thyme, or a squeeze of lemon or orange zest can brighten up the glaze and add a touch of acidity.

Conclusion:

Alton Brown's Glazed Carrots are a simple yet elegant side dish that can elevate any meal.
