1 c vanilla wafer crumbs
1/4 c butter, melted
16 oz cream cheese, softened
1/3 c sugar
2 Tbsp milk
2 large eggs
1/2 c macadamia nuts, toasted
8 1/2 oz pineapple, crushed, drained
1 medium kiwi, peeled and sliced

Steps:

  • 1. Combine crumbs and butter; press onto bottom of 9-inch springform pan.
  • 2. Bake at 350 degrees, 10 minutes.
  • 3. Combine cream cheese, sugar and milk, mixing at medium speed on electric mixer until well blended.
  • 4. Add eggs, one at a time, mixing well well after each addition.
  • 5. Stir in nuts; pour over crust.
  • 6. Bake at 350 degrees, 45 minutes.
  • 7. Loosen cake from rim of pan; cool before removing rim of pan.
  • 8. Chill - Before serving, top with fruit.

1 each Med Kiwi Peeled -- Sliced

  • Combine crumbs and margarine; press onto bottom of 9-inch springform pan. Bake at 350 degrees F., 10 minutes. Combine cream cheese, sugar and milk, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well well after each addition. Stir in nuts; pour over crust.
