Is it possible that Freda's candies are even creamier and more delicious than their namesakes? YES! These delightful bites are perfect for the holidays or anytime you're in need of a sweet treat.

Number Of Ingredients 10

MOUND'S
MIX 1ST 3 ITEMS TOGETHER, MIX WELL
1 lb bag sweetened coconut
1 lb- box powdered sugar
1 can(s) (Eagle brand) 14 oz size sweetened condensed milk, (do not use evaporated milk)
3 C almonds
DIPPING CHOCOLATE:
1 bag chocolate chips or chocolate almond bark
IF CHOC/BARK IS TOO THICK TO DIP CANDY
see note below: parrafin wax as needed, approx. 1/2 block wax to 1 1/2 lb chocolate (add to chocolate little at a time in small chunks ) this keeps your chocolate thin when dipping

Steps:

  • 1. Mix powder sugar and Sweetened CONDENSED MILK together. (DO NOT USE EVAPORATED MILK) Blend well. Next add coconut, stirring till well blended. (Mixture will be thick.)
  • 2. With buttered hands, form into logs to cut into 1/1/2" long pieces or roll into balls to shape for Mounds. Candy MUST CHILL until chocolate is melted and ready to dip chocolates. (Chilling candy makes for easier dipping.) Optional: see Almond Joy below; top with almond on each.
  • 3. Melt chocolate chips or almond bark, on med-low heat in double boiler. Make sure this choc is THIN, to coat the candy. NOTE: If chocolate or bark gets too thick to dip candy, add a little paraffin wax to the chocolate to thin to needed consistency. Use only a little at a time. Melt into chocolate (approx 1 TBS) you can always add more as needed.
  • 4. Dip each chilled Mound candy into chocolate with toothpick or small slotted spoon. Place on parchment or wax paper lined baking sheet to set... chill til set and remove from refrigerator.
  • 5. FOR ALMOND JOY; Press one or two almonds slightly into top of the mounds, before dipping into chocolate.
  • 6. Tip: Use buttered hands to roll your candy or Mounds, this makes it so much easier. Store in covered tin in refrigerator. Remove from refrigerator 1/2 before serving candies.

5 oz sweetened condensed milk
1 tsp vanilla extract
2 c powdered sugar
14 oz shredded coconut
24 oz milk chocolate chips or semi sweet
1 c whole roasted almonds

Steps:

  • 1. Blend the condensed milk and vanilla. Add the powdered sugar to the above mixture a little at a time, stirring until smooth. Stir in the coconut. The mixture should be firm. Pat the mixture firmly into a greased 9x13x2-inch pan. Chill in the refrigerator until firm. In a double boiler over hot, not boiling water, melt the chocolate, stirring often. You may also use a microwave. Remove the coconut mixture from the refrigerator and cut it into 1x2-inch bars. Put 2 whole almonds atop each bar. Set each coconut bar onto a fork and dip it into the chocolate. Tap the fork against the side of the pan or bowl to remove any excess chocolate. Air dry at room temperature on waxed paper for several hours. You may speed up the process by putting in the refrigerator for 30 minutes

This is my version of a coconut chocolate almond bars. It is a copycat recipe for almond Joy candy bars. I've had a lot of compliments on these bars recently. People have been asking me for the recipe on this site and elsewhere. So, I thought, I would post my version. We especially like them with the dark chocolate in my...

21-24 oz flaked coconut or unsweetened ( i used sweetened)
1 can(s) 14 ounce sweetened condensed milk
2 1/2 c powdered sugar
2 tsp coconut extract
8 oz whole almonds
4 c (2) 12 ounce bags of semi sweet or dark chocolate
4 Tbsp shortening or 1/4 block of parrafin wax.
NOTE: I USED ONE 12 OUNCE BAG OF EACH SEMI SWEET CHOCOLATE CHIPS AND DARK CHOCOLATE CHIPS. IF YOU WOULD LIKE TO HAVE BOTH. SIMPLY PLACE 12 OUNCES OF EACH TO A BOWL WITH ONLY 2 TABLESPOONS OF MELTED SHORTENING. YOU'LL DIP IN EACH CHOCOLATE.

Steps:

  • 1. Line a 13 x 9" pan with parchment paper or aluminum foil
  • 2. In a large bowl. Mix together the coconut, condensed milk, and coconut extract
  • 3. Add in the powdered sugar. Mix well. Mixture should be thick. You may also add an additional coconut if you would like a thicker consistency. These bars are very forgiving. Do not be afraid to add more coconut.
  • 4. Spread into prepared pan. With a sharp knife. Score 40 bars but do not cut all the way through
  • 5. Push almonds halfway into each bar. You may place 2-3 on each bar.
  • 6. Refrigerate until set. You can also quicken the process, by placing them in the freezer for 15 to 20 minutes.
  • 7. When the mixture is firm. remove from the refrigerator. Cut all the way through scored mixture to make bars. Set aside by putting back in the refrigerator, until ready to use.
  • 8. Line a sheet pan or several small pans, with parchment paper or aluminum foil. Spray lightly with vegetable oil spray, if using foil.
  • 9. Melt shotening, or parrafin wax in a lage bowl by microwaving until melted.
  • 10. Add in the chocolate chips are well. Place back in microwave. Stop microwave add about 40 second to one minute intervals to stir. When it is fully melted and combined. Remove from microwave. .
  • 11. Remove coconut bars from refrigerator. Step one bar at a time in the melted chocolate with a large soup spoon. Drain off chocolate. Place each bar on lined pan. Repeat the process until all bars are dipped.
  • 12. Place bars in refrigerator until set. You can store them in the refrigerator or in a loosely covered container. I stored mine in the refrigerator in a container or Ziploc bag.

Tips:

  • Make sure to use high-quality chocolate for the best flavor.
  • If you don't have a candy thermometer, you can test the sugar syrup by dropping a small amount into a glass of cold water. If it forms a soft ball, it is ready.
  • Be careful not to overcook the sugar syrup, as it can become hard and brittle.
  • When dipping the coconut balls into the chocolate, use a fork to help you coat them evenly.
  • Place the chocolate-covered coconut balls on a parchment paper-lined baking sheet and refrigerate them until the chocolate is set.
  • Store the Almond Joy candies in the refrigerator for up to 2 weeks.
