1/3-1/2 cup honey
2 eggs
1 cup unsweetened applesauce
1 teaspoon maple extract (optional)
1 1/2 cups whole wheat flour
1/2 cup wheat germ
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup raisins or 1/2 cup currants

Steps:

  • Beat butter and honey together in mixing bowl.
  • Add eggs, applesauce, and maple extract (if using) and beat well.

1 1/2 cups unsweetened applesauce
2 tablespoons vegetable oil
1/4 cup white sugar
1/4 cup brown sugar (firmly packed)
1 cup all-purpose flour
1 cup whole wheat flour

1/2 teaspoon baking soda
1 teaspoon salt
1/4 cup raisins
1/4 cup walnut pieces

Steps:

  • Preheat oven to 350°F Grease a loaf pan.

2/3 cup skim milk or 2/3 cup low-fat milk
2 tablespoons oil
1 1/2 cups bran flakes
