CRANBERRY SAUCE SALSA

Cranberry Sauce Salsa image

Don't toss that little bit of cranberry sauce leftover from Thanksgiving dinner. This recipe, which we developed for a special kids' edition of The New York Times, calls for making it into a savory-sweet salsa that everyone will love. Just add some chopped fresh tomatoes, onion, garlic, cilantro and jalapeño to prepared whole cranberry sauce (not the jellied stuff). Stir in some lime zest and juice, and a sprinkling of chile powder, cumin and cayenne. Serve with enchilada pie or tortilla chips, and consider stocking canned cranberry sauce in your cabinet all year long.

ADDIE'S CRANBERRY ORANGE SALSA

Categories     Dessert

Number Of Ingredients 8

12 oz fresh or frozen cranberries, chopped
1/2 cup honey
2 medium navel oranges, peeled, sectioned, & finely chopped
1 small red onion, finely chopped
1/2 cup dried apricots, cut into thin strips
1/4 to 1/2 cup cilantro
2 jalepenos, seeded & minced
2 Tbl lime juice

Steps:

  • Mix all together. Refridgerate 2 hours. Serve over turkey or pork.

Tips:

  • Use fresh cranberries. Fresh cranberries have a tart flavor that complements the sweetness of the oranges and sugar. If you can't find fresh cranberries, you can use frozen cranberries, but be sure to thaw them before using.
  • Choose oranges that are ripe and juicy. The oranges will add a bright, citrusy flavor to the salsa. Be sure to zest the oranges before juicing them, as the zest contains a lot of flavor.
  • Use a sharp knife to dice the cranberries and oranges. This will help to prevent the fruit from becoming mushy.
  • Stir in the sugar and vinegar to taste. The amount of sugar and vinegar you add will depend on your personal preference. If you like a sweeter salsa, add more sugar. If you like a tangier salsa, add more vinegar.
  • Chill the salsa for at least 30 minutes before serving. This will allow the flavors to meld together.

Conclusion:

This cranberry orange salsa is a delicious and versatile condiment that can be used in many different ways. It's great as a topping for tacos, burritos, and enchiladas. It can also be used as a dipping sauce for chips, pretzels, or vegetables. Or, you can simply enjoy it on its own as a snack. No matter how you choose to use it, this salsa is sure to be a hit!
