EASY CAPONATA
Caponata is a Sicilian dish with eggplant, zucchini, tomato, and peppers traditionally cooked in oil and vinegar and flavored with sugar, raisins, capers, olives, and pine nuts. It's tangy, sweet, crunchy, and salty all at the same time. Serve at room temperature as a side dish to grilled fish or as a starter on toasted bread. Store leftovers in fridge and reheat gently. It will taste even better the next day!

ZUCCHINI RAISIN COOKIES
This favorite old recipe means a lot to me, since it was given to me by a good friend. That friend, in turn, received it from her great-grandmother. I'm always looking for ways to use zucchini (I even add it to my spaghetti sauce), so this was a welcome addition to my recipe file.

Steps:
- Heat the oil in a medium skillet and sauté the garlic over moderate heat, stirring, just until the garlic begins to turn golden and becomes aromatic. Do not allow the garlic to overbrown.
- Add the sliced zucchini and sauté for a few minutes, stirring.
- Add the tomatoes, anchovy paste, raisins, and vinegar. Mix well, then cook over moderate heat, stirring occasionally, for about 10 to 12 minutes, until the sauce has thickened and most of the liquid has cooked away.
- Stir in the black pepper and pine nuts. Serve warm or at room temperature.
Tips:
- Selecting the Right Zucchini: Choose small to medium-sized zucchini as they tend to have a sweeter and more tender flesh. Avoid overgrown zucchini as they may have a tough texture and larger seeds.
- Prepping the Zucchini: To prepare the zucchini, wash them thoroughly and pat them dry. Cut off the ends and slice them into thin rounds or half-moons. If desired, you can also peel the zucchini before slicing.
- Sautéing the Zucchini: Heat a large skillet or sauté pan over medium heat. Add some olive oil or butter and allow it to melt. Once the oil is shimmering, add the sliced zucchini and cook until they begin to soften and brown slightly, stirring frequently.
- Adding the Raisins and Pine Nuts: Once the zucchini is cooked, add the raisins and pine nuts to the pan. Stir to combine and cook for a few more minutes until the raisins plump up and the pine nuts become golden brown.
- Seasoning and Serving: Season the zucchini mixture with salt, pepper, and any other desired herbs or spices. Serve immediately as a side dish or as a topping for grilled meats or fish.
Conclusion:
This delectable zucchini recipe offers a delightful combination of flavors and textures, making it a versatile dish that can be enjoyed in various ways.
