3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon ground cinnamon
3 eggs
1 cup vegetable oil
2 ¼ cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts

Steps:

  • Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
  • Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  • Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.

1 teaspoon salt
1 cup corn oil
3/4 cup sugar
3 eggs, room temperature
1/2 cup honey
1/4 cup fresh lemon juice
2 tablespoons grated lemons, zest of
2 1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 1/2 cups chopped almonds, toasted
2 tablespoons honey

Steps:

  • Mix zucchini and salt in colander.
  • Weight with plate and let drain 1 hour.
  • Squeeze out excess moisture.
  • Preheat oven to 350F.
  • Grease 13 X 9 inch pyrex baking dish.
  • Mix oil, sugar, eggs, ½ cup honey (if you measure out the oil before measuring out the honey, it will be easier to get the honey out of the measuring cup since it will have a film of oil in it), lemon juice and zest in large bowl until well-blended.
