Zucchini Rounds Side Dish ( Sandra Lee - Semi-Homemade ) image

This is a great little side dish Sandra Lee suggested serving with Spaghetti and Meatballs which we did but loved it so much I wanted to post it so it could be made with anything as a side dish. She concurs saying "it can accompany any entree." This is from her magazine's August/September 2009 issue. It is yummy and the kids even ate it happily. Great for garden leftover zucchini. Very flavorful. It is made with simple pantry ingredients besides fresh zucchini.Taste and enjoy. ChefDLH

Time 25m

Yield 4 servings

Number Of Ingredients 6

2 tablespoons extra-virgin olive oil
1 1/2 pounds zucchini, sliced 1/4-inch thick
1 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano
1 tablespoon finely chopped fresh oregano leaves
1 teaspoon dried oregano
Salt and pepper

Steps:

  • In a large frying pan over medium high heat, heat olive oil. Add sliced zucchini and saute for 3 to 4 minutes. Add remaining ingredients and bring to boil. Reduce heat and simmer for 5 to 7 minutes or until zucchini is crisp-tender. Adjust seasoning with salt and pepper and serve.

Tips:

  • Choose the right zucchini. Look for firm, brightly colored zucchini that are about 6 inches long. Avoid zucchini that are too large, as they can be tough and seedy.
  • Slice the zucchini evenly. This will help them cook evenly. If you're using a mandoline, be careful not to slice the zucchini too thinly, or they will fall apart when you cook them.
  • Use a nonstick skillet. This will help prevent the zucchini from sticking and burning.
  • Don't overcrowd the skillet. Cook the zucchini in batches if necessary, so that they have enough room to brown.
  • Season the zucchini well. Salt, pepper, and garlic powder are all good options.
  • Cook the zucchini until they are tender. They should be slightly browned on the outside and tender on the inside.
  • Serve the zucchini immediately. They can be served as a side dish or a main course.

Conclusion:

Zucchini rounds are a delicious and versatile dish that can be enjoyed by people of all ages. They are easy to make and can be customized to your liking. Whether you like them plain or with a variety of toppings, zucchini rounds are a great way to add some healthy vegetables to your diet.
