Late in the summer there's usually an abundance of zucchini and this recipe is one way to use it up. Make a few batches and freeze any extra loaves to have on hand for snacks and quick breakfasts.

1 medium zucchini (8 ounces)
½ teaspoon salt
Nonstick cooking spray
1 ½ cups gluten-free oat flour
1 cup gluten-free all-purpose flour
½ cup almond flour
½ cup sugar (see Tip)
⅓ cup vanilla-flavor whey protein powder
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
6 ounces plain fat-free Greek yogurt
2 eggs
¾ cup unsweetened almond milk
½ cup chopped walnuts

Steps:

  • Coarsely shred zucchini (you should have about 2 cups shredded zucchini). Place shredded zucchini in a sieve set over a bowl. Sprinkle the salt over zucchini; toss to combine. Let stand 1 hour to drain. Place zucchini between three or four layers of 100-percent-cotton cheesecloth or two or three layers of paper towels; squeeze out excess liquid. Set aside.
  • Preheat oven to 325 degrees F. Coat a 9x5x3-inch loaf pan with cooking spray or line with parchment paper; set aside.
  • In a large bowl whisk together gluten-free oat flour, gluten-free all-purpose flour, almond flour, sugar, whey protein powder, baking powder, cinnamon, ginger, and cloves.
  • In another large bowl whisk together yogurt and shredded zucchini. Add eggs and almond milk; stir until combined.
  • Add flour mixture to zucchini mixture; stir until well mixed. Stir in walnuts.
  • Spoon batter into prepared pan. Bake 65 to 75 minutes or until a wooden toothpick inserted in the center comes out with only a few moist crumbs attached.
  • Cool in pan on a wire rack 10 minutes. Run a thin metal spatula around the sides; turn out onto the wire rack. Cool completely.

1½ cup Shredded Zucchini (moisture intact, 246g, 1½ medium)
½ cup Unsweetened Almond Milk (120ml)
6 Tbsp Unsweetened Applesauce (90g)
¼ cup Non-fat Greek Yogurt (56g, Room temperature)
2 Eggs (Room Temperature)
1 Tbsp Coconut Oil
1 cup 1:1 Gluten Free Baking Flour (120g)
½ cup Unflavored Protein Powder (45g, 1½ scoop)
½ cup Vanilla Protein Powder (45g, 1½ scoop)
1 tsp Cinnamon
¼ tsp Nutmeg
¾ tsp Baking Powder
½ tsp Baking Soda
Optional: ¼ cup Chocolate Chunks (Sugar free recommended below)
¼ cup Walnuts/Pecans

Steps:

  • Preheat oven to 350°F and line an 8½" x 4½" loaf pan with parchment paper.
  • Finely shred zucchini using food processor or grater and squeeze out as much moisture as possible.
  • In a large bowl, whisk together almond milk, applesauce, Greek yogurt, eggs and coconut oil.
  • Add zucchini and mix.
  • In another bowl, whisk gluten free flour, unflavored protein powder, vanilla protein powder, cinnamon, nutmeg, baking powder and baking soda.
  • Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder and gluten from wheat flour will make the bread dense.Small streaks of flour are okay.
  • Transfer ⅔ batter to baking pan, sprinkle chocolate/other mix-ins, add remaining batter. Smoothen top with back of spoon or spatula.
  • Bake for 55-60 minutes, covering with a foil tent after 30 minutes.A toothpick inserted into center should come out dry.
  • Cool for 15 minutes, then lift out of pan using the lining. Transfer to a wire rack to cool completely, about 40 minutes and cut into slices.

I got this recipe from Mollie Katzen's Sunlight Cafe. I changed it just a little bit, because it calls for pecans, and my boyfriend can't eat them. This is wonderful for breakfast with cream cheese spread on it! High protein, low sugar, very nutritious!

2 cups zucchini, grated
1/4 teaspoon salt
1 cup flour
1 cup soy flour
1/2 teaspoon salt
2 teaspoons baking powder
1/8 teaspoon baking soda
1/2 cup turbinado sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
2/3 cup buttermilk
2 eggs
2 teaspoons vanilla
3 tablespoons butter, melted
1/4 cup pine nuts
1/4 cup sunflower seeds
1/2 cup currants

Steps:

  • place grated zucchini in colander and sprinkle with 1/4 teaspoon salt. mix well and let sit at least 10 minutes. squeeze out excess water.
  • grease a normal size loaf pan, or two small loaf pans. preheat oven to 350 f.
  • combine both flours, 1/2 teaspoon salt, baking powder, baking soda, turbinado (or sugar), cinnamon, nutmeg, and ginger.
  • in a separate bowl, combine the zucchini (be sure it has most of the water squeezed out), buttermilk, eggs, vanilla, and butter. i find it is easiest to add the butter to the zucchini, mix it, and then add the rest. otherwise i accidently cook my eggs with the hot butter.
  • add the zucchini mix to the dry ingredients. mix well. add the nuts and currants. mix well.
  • pour into bread pan(s) and bake about one hour. i usually have to add another fifteen minutes if it is all in one pan, because the bottom is still so gooey.
