Japanese Chess Pie image

This recipe came from my co-worker who makes it for everyones' birthdays! We all love it! I don't like raisins so I leave them out when I make it and slighty increase the coconut and pecans! It is so good! :)

Number Of Ingredients 8

1/2 cup butter, melted
2 eggs
1/2 cup raisins
1 teaspoon vanilla
1 cup sugar
1/2 cup pecans
1/2 cup coconut
9 inches pie shells

Steps:

  • Mix ingredients and pour into pie shell.
  • Bake at 350*F for 40-45 minutes.
  • If the pie does not appear to be set after 45 minutes, cook in five minute increments until it is slightly jiggly in the middle (a little like Jello) and allow to cool and it will set up.
