1 ¼ cup granulated sugar
6 tablespoons extra virgin olive oil (or vegetable or canola oil)
2 eggs (room temperature)
⅓ cup vanilla almondmilk (or whole milk)
2 tablespoons lemon juice
1 teaspoon vanilla or almond extract
2 cups cake flour
1 ⅓ teaspoons baking powder
½ teaspoon kosher salt
1 ½ cup shredded zucchini (drained and squeezed dry)
2 tablespoons lemon zest
1 cup powdered sugar
1 to 2 tablespoons lemon juice

Steps:

  • Preheat oven to 350°F.
  • Spray a loaf pan with baking spray and line with parchment paper. Set aside.
  • Combine flour, baking powder, and salt in a medium bowl and whisk together. Set aside.
  • In a large bowl, combine the sugar and olive oil. Whisk to combine.

2 cups sugar
1-1/3 cups vegetable oil
2-1/2 cups all-purpose flour
2 teaspoons baking soda

1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 teaspoon salt
2 cups finely shredded carrots
2 cups finely shredded zucchini
1 cup coarsely chopped pecans or walnuts
FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
5 cups confectioners' sugar
2 teaspoons vanilla extract
Whole or chopped pecans or walnuts for garnish, optional

Steps:

  • In a large bowl beat eggs and sugar until frothy. Gradually beat in oil. Combine dry ingredients; add to batter. Beat 4 minutes. Stir in carrots, zucchini and nuts. Pour into three greased 9-in. round baking pans. Bake at 350° for about 35 minutes or until top springs back when lightly touched. Cool 5 minutes before removing from pans. Cool thoroughly on a wire rack. , For frosting, beat cream cheese and butter in a large bowl until smooth. Add sugar and vanilla. Continue beating until sugar is dissolved. 1/2 cup sugar

1/4 cup milk (use 1/3 cup if making carrot version)

1 cup raisins
2 cups powdered sugar

1 1/2 c all purpose flour
1/2 c brown sugar, firmly packed
1 tsp baking powder
1/2 tsp ground ginger
1/4 tsp baking soda
2 large eggs, beaten
1 1/2 c shredded fresh carrots
1 c shredded fresh zucchini
1/2 c raisins
3/4 c chopped walnuts
1/2 c vegetable oil
1/2 c honey
1 tsp vanilla extract
LIME CREAM CHEESE FROSTING
1 pkg (8 ounces) cream cheese, softened
1 c sifted powdered sugar
1 tsp finely shredded lemon peel
1 tsp finely shredded lime peel

Steps:

  • 1. Preheat oven to 350 degrees. In a large bowl mix together flour, brown sugar, baking powder, ginger, and baking soda. In another bowl stir together eggs, carrot, zucchini, raisins, walnuts, oil, honey, and vanilla.
  • 2. Add carrot mixture to flour mixture and stir just until mixed. Spread batter in an un-greased 9 by 13 inch cake pan. Bake for 25 minutes or until toothpick inserted in center of bar comes out clean. Cool pan on a wire rack and when cool frost with Lemon-Lime Frosting.

4 oz pkg. instant lemon pudding
1 tsp grated lemon zest
FROSTING
3 Tbsp butter; room temp.
3 oz cream cheese; softened
1 1/2 c powdered sugar
1 tsp grated lemon zest
1 tsp fresh lemon juice

Steps:

  • 1. Mix all cake ingredients on low speed for 3 minutes.
  • 2. Pour into prepared 9x13" baking pan. Bake @ 325F for 40 minutes.
  • 3. Remove cake from oven & let cool completely. Meanwhile, prepare frosting.
  • 4. Cream together butter & cream cheese. Add powdered sugar & mix well. Add lemon juice & zest and mix to combine.
