Time 40m

Yield 12 serving(s)

Number Of Ingredients 10

2 1/2 cups flour
1 1/2 cups sugar
1 cup chopped nuts
1/2 cup rolled oats
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
4 eggs, beaten
1 medium zucchini, shredded (about 1 1/2 cups)
3/4 cup oil

Steps:

  • Grease 12 medium size muffin tin. Preheat oven 400 degrees.
  • Mix dry ingredients together in large bowl. Mix eggs, oil and shredded zucchini together and pour over dry ingredients. Mix until moinstened.
  • Spoon batter into muffin tins. Bake 25 minutes. Cool on wire rack. These freeze well.

Tips:

  • Use ripe zucchini: The riper the zucchini, the more flavor and moisture it will add to your muffins.
  • Grate the zucchini: Grating the zucchini helps it blend into the batter more easily and evenly.
  • Don't overmix the batter: Overmixing the batter can make the muffins tough. Mix just until the ingredients are combined.
  • Fill the muffin cups only 2/3 full: This will help prevent the muffins from overflowing.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This usually takes about 20-25 minutes.
  • Let the muffins cool before serving: This will help them set and firm up.

Conclusion:

These Zucchini Oatmeal Muffins are the perfect way to start your day. They're healthy, delicious, and easy to make. Plus, they're a great way to use up any leftover zucchini.
