SUE'S ZUCCHINI COBBLER
This tastes very much like an apple cobbler. I came up with this recipe by combining several others. It turned out very well. I had several testers and they all gave it a thumb's up.

Steps:
- 1. Heat the zucchini and lemon juice in a saucepan over medium heat until tender (about 15 min). Mix together sugar, cinnamon & nutmeg and add to the zucchini after about 10 minutes. Let it continue cooking the remaining 5 minutes. Set aside.
- 2. To prepare the crust: add cake mix, oats, nuts together and pour the melted margarine over them and mix well.
- 3. Spread half the cake mixture evenly into a greased 9X13 pan.
- 4. Pour the zucchini mixture evenly over the crust. Distribute the remaining cake mixture over the filling as evenly as possible and bake in a 375 degree oven for 35 min. or until golden brown.
- 5. Very good warm plain or with vanilla ice cream, or cold the next day.
Tips:
- Use fresh zucchini: Fresh zucchini has a sweeter flavor and crisper texture than older zucchini. If you can, pick zucchini that is no more than 8 inches long and has a deep green color.
- Grate the zucchini: Grating the zucchini will help it cook evenly and will also make it easier to incorporate into the cobbler batter.
- Don't overmix the batter: Overmixing the batter will make the cobbler tough. Mix just until the ingredients are combined.
- Use a hot oven: A hot oven will help the cobbler to rise and will also create a crispy crust.
- Serve warm: Zucchini cobbler is best served warm, with a scoop of vanilla ice cream or whipped cream.
Conclusion:
Zucchini cobbler is a delicious and easy-to-make dessert that is perfect for summer. It is a great way to use up fresh zucchini from your garden, and it can be enjoyed by people of all ages. With its sweet and savory flavor, zucchini cobbler is a surefire hit at any gathering.
