CREAM CHEESE ZUCCHINI BREAD (LOAF AND/OR MUFFINS)

Cream Cheese Zucchini Bread (Loaf And/Or Muffins) image

This was a forgotten recipe in Private Recipes folder. I vaguely remember working on it a year or so ago! I tried it out again this morning, and it's very good if I do say so myself. I use Splenda and low fat ingredients and am posting it that way for the nutritional info, but feel free to use regular ingredients if you desire. This makes two loaves so you can eat one and give one away or freeze for later use. When I made it this morning, I made a loaf and 10 muffins. Because I was using it as a breakfast bread I left out the brown sugar to make it less sweet. For a sweeter, snack type bread, make as written. Hope you enjoy!

Tips:

  • Choose the right zucchini: Look for small to medium-sized zucchini that are firm and have a deep green color. Avoid zucchini that are large, soft, or have blemishes.
  • Grate the zucchini correctly: Use the large holes of a box grater to grate the zucchini. This will help to release more moisture and make the bread more tender.
  • Squeeze out the excess moisture: After grating the zucchini, place it in a colander and use a spoon or your hands to squeeze out the excess moisture. This will help to prevent the bread from becoming too wet.
  • Use a good quality cheese: The type of cheese you use will have a big impact on the flavor of the bread. Use a sharp cheddar cheese for a bold flavor or a mild cheddar cheese for a more subtle flavor.
  • Don't overmix the batter: Overmixing the batter will make the bread tough. Mix the ingredients just until they are combined.
  • Bake the bread at the right temperature: The bread should be baked at 350 degrees Fahrenheit for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Conclusion:

Zucchini cheese bread is a delicious and easy-to-make bread that is perfect for any occasion. It is a great way to use up leftover zucchini and it is also a healthy alternative to traditional white bread. With its moist texture and flavorful crust, zucchini cheese bread is sure to be a hit with everyone who tries it.
