Categories     One Dish Meal

Time 35m

Yield 6 serving(s)

Number Of Ingredients 10

1 lb lean ground beef or 1 lb ground turkey
2 lbs medium zucchini, approx. 9, cut in 1/4-inch half circles
1 green bell pepper, chopped
1 large white onion, chopped
2 garlic cloves, minced
1 (26 ounce) jar spaghetti sauce, your choice
1 teaspoon garlic powder
1 teaspoon dried sweet basil leaves
1/2 teaspoon ground black pepper
salt

Steps:

  • Brown ground beef with onion and bell pepper in a large skillet or pot with lid. Drain grease.
  • Add garlic and seasonings. Stir.
  • Add zucchini and stir. Cover with lid and cook over medium heat for approximately 15 minutes until the zucchini is crisp tender (I don't add any water, the zucchini has enough). Stir about every 5 minutes.
  • Remove lid and stir in spaghetti sauce. Cook for another 5 minutes.
  • Great served with cottage cheese or topped with parmesan!

Tips:

  • Use a large skillet to prevent overcrowding and ensure even cooking.
  • Slice the zucchini thinly and evenly so that it cooks at the same rate as the other ingredients.
  • Brown the beef in batches if necessary to prevent overcrowding and ensure even cooking.
  • Use a spatula to break up the beef as it cooks to create smaller, more evenly cooked pieces.
  • Add the zucchini and cook until tender-crisp, about 5 minutes, stirring occasionally.
  • Stir in the tomatoes, Italian seasoning, salt, and pepper and bring to a simmer.
  • Reduce heat to low, cover, and simmer for 15 minutes, or until the beef is cooked through and the sauce has thickened.
  • Serve over rice, pasta, or mashed potatoes.

Conclusion:

This zucchini beef skillet is a quick, easy, and delicious meal that is perfect for a busy weeknight. It is packed with flavor and can be easily customized to your liking.
