This is a family favorite. I make these and freeze slices between waxed paper. Put into a freezer bag and winter blahs are lifted when eating summer veggies. This is a great little freezer-friendly appetizer for the holidays or any get-together.

Time 45m

Number Of Ingredients 11

3 c thinly sliced uncooked zucchini (about 4 small)
1 c bisquick baking mix
1/2 c finely chopped onion
1/2 c grated parmesan cheese
2 Tbsp parsley flakes or fresh snipped
1/2 tsp salt
1/2 tsp oregano, dried
1 clove garlic finely chopped
1/2 c vegetable oil
4 eggs, slightly beaten
dash of pepper

Steps:

  • 1. preheat oven to 350 degrees. Grease 13X9 pan. Mix all ingredients, spread in pan.
  • 2. Bake until golden brown, about 25 minutes. Cut into pieces. Enjoy!

Tips:

  • Select the right zucchini: Choose firm and medium-sized zucchini for appetizers. Overripe zucchini can be too soft and watery.
  • Slice zucchini uniformly: Consistent slicing ensures even cooking and presentation. Use a mandoline for precise and uniform slices.
  • Marinate zucchini: Marinating zucchini in herbs, spices, and oil enhances its flavor. Marinate for at least 30 minutes, or up to overnight.
  • Cook zucchini properly: Whether grilling, frying, or baking, cook zucchini until tender but still slightly firm to retain its texture and nutrients.
  • Use fresh and flavorful ingredients: High-quality ingredients elevate the taste of your appetizers. Opt for fresh herbs, flavorful cheeses, and zesty sauces.
  • Experiment with different flavors: From classic Italian to spicy Mexican, there are endless flavor combinations to explore. Try different herbs, spices, and sauces to create unique and delicious appetizers.

Conclusion:

With their versatility, delicate flavor, and endless recipe possibilities, zucchini appetizers are a delightful addition to any occasion. Whether you prefer crispy fritters, savory stuffed zucchini, or refreshing salads, these appetizers offer a burst of flavor and nutrition. Experiment with different recipes, explore new flavor combinations, and impress your guests with your culinary skills.
