ZUCCHINI AND CHEESE CASSEROLE

Zucchini and Cheese Casserole image

I'm not a huge fan of zucchini, but like everyone else, I seem to end up with an abundance of them from the garden. I found this recipe on another site (can't remember which one) and I really enjoy it, though I can't say its all that healthy. Gotta love the cheese!

Time 1h20m

Yield 4 serving(s)

Number Of Ingredients 7

4 slices bread, cubed
1/4 cup melted butter
2 cups cubed zucchini
1 large onion, chopped
1 teaspoon garlic salt
1 egg, beaten
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350°F.
  • In a medium bowl, pour the melted butter over the bread.
  • Add the zucchini, onion, garlic salt and egg. Mix well.
  • Put the mixture in a 9 x 13 baking dish and top with the cheese.
  • Bake, covered, for 30 minutes, then another 30 minutes uncovered.

Tips:

  • Choose fresh, firm zucchini. Overripe zucchini will be watery and mushy, which will make for a less-than-stellar casserole.
  • Grate the zucchini with a box grater. This will help it cook evenly and quickly.
  • Use a combination of cheeses. This will give the casserole a more complex flavor. A good option is to use a blend of cheddar, mozzarella, and Parmesan cheeses.
  • Add some herbs or spices for extra flavor. Garlic powder, onion powder, Italian seasoning, or fresh herbs like basil or oregano are all good choices.
  • Don't overcook the casserole. Cook it just until the zucchini is tender and the cheese is melted and bubbly.

Conclusion:

Zucchini and cheese casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover zucchini from your garden. With its simple ingredients and customizable flavor, this casserole is sure to become a family favorite.
