Extra Cheesy Baked Ziti image

Provided by Adam and Joanne Gallagher

Categories     Main, Dinner

Time 30m

Yield Makes 8 servings

Number Of Ingredients 11

1 pound dried pasta like ziti, penne or rigatoni
1 (28 ounce) can San Marzano whole tomatoes
1 cup (20 grams) fresh basil leaves or 3 tablespoons dried basil
1/2 teaspoon fine sea salt, plus more to taste
1/2 teaspoon fresh ground black pepper
3 garlic cloves, minced (1 tablespoon)
1/2 cup (4 ounces) mascarpone cheese or use whole milk ricotta
2 tablespoons extra-virgin olive oil
4 1/2 ounces (1 1/2 cups) shredded mozzarella cheese
4 1/2 ounces (1 1/2 cups) shredded Fontina cheese
2 1/4 ounces (3/4 cup) shredded Pecorino Romano cheese

Steps:

  • Combine canned tomatoes and their juices, basil, garlic, salt, pepper and the mascarpone cheese in a blender or food processor. (A food mill will also work.) Blend until the basil and garlic are chopped into tiny bits and the sauce is well mixed. Taste and adjust with additional salt as needed. Set aside.
  • Heat the oven to 425 degrees Fahrenheit (if your oven runs hot, reduce this to 400 degrees Fahrenheit.)
  • Bring a large pot of salted water to the boil, add the pasta, and then cook for about half of the recommended cook time on the package (5 or 6 minutes). Save 1/2 cup of the pasta water, drain the pasta, and then place it back into the pot. Undercooking the pasta makes sure that it does not overcook when baked with the sauce in the oven.
  • In a medium bowl, toss the mozzarella, Fontina and Pecorino Romano cheese together.
  • Add the sauce, 1/4 cup of the reserved pasta water and three-quarters of the shredded cheese mix to the pot with pasta. Stir well. The mixture should look a bit thin, if it seems thick, add a splash more of the reserved pasta water.
  • Transfer the ziti mixture to a large baking dish and top with the remaining shredded cheese mix. Bake 10 to 15 minutes or until the sauce is bubbling and the cheese is melted and golden brown on top. Allow the baked ziti to cool for 5 minutes before serving.

  • Cook the ziti in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
  • Add the tomato sauce, half of both the mozzarella and Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. THE BEST BAKED ZITI

The Best Baked Ziti image

I am half Italian, was raised eating the finest Italian-American cuisine, and have filmed almost 2000 recipe videos, so when you consider all of those facts, it seems incredible that I have never posted a video for baked ziti. Hopefully I make up for that long wait by posting what I think is the best version of it.

Provided by Chef John

Categories     World Cuisine Recipes     European     Italian

Time 2h20m

Yield 10

Number Of Ingredients 15

¾ pound hot Italian sausage
¾ pound sweet Italian sausage
2 tablespoons olive oil
1 large yellow onion, diced
½ teaspoon dried oregano
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
2 (24 ounce) jars prepared marinara sauce
2 cups water
1 (16 ounce) package ziti pasta
1 drizzle olive oil
1 ½ cups whole-milk ricotta cheese
8 ounces mozzarella cheese, cut into small cubes
1 cup grated Pecorino Romano cheese
1 teaspoon chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Cut down the length of each sausage with a sharp knife. Remove and discard casings.
  • Heat olive oil in a large saucepan set over high heat. Add sausages and onion. Cook, stirring occasionally and breaking up with a spatula, until the sausage begins to brown, and the onion turns translucent, 5 to 7 minutes. Add oregano, thyme, and rosemary and cook for 1 minute more. Pour in marinara sauce. Pour 1 cup water into each jar to rinse out remaining sauce; add to the saucepan. Stir together and bring sauce to a simmer.
  • Reduce the heat to medium-low, and let simmer, stirring occasionally, for 1 hour. Taste for seasoning and adjust if needed. Turn off heat and reserve until needed. Before using, skim any excess fat that rises to the surface.
  • While sauce simmers, bring a large pot of generously salted water to a boil. Add ziti and cook, stirring occasionally, for 1 or 2 minutes less than the directions on the package call for, about 8 minutes. Drain well and transfer into a large mixing bowl.
  • Carefully add the meat sauce and stir until thoroughly combined. Let rest for 5 minutes.
  • Meanwhile, preheat the oven to 375 degrees F (190 degrees C). Grease a large 9x15-inch or 9x13-inch casserole dish with a drizzle of olive oil.
  • Use a slotted spoon to transfer half of the pasta and sauce mixture to the prepared dish, then use a spatula to even out into a uniform layer. Top with 1/2 of the ricotta cheese, 1/2 of the mozzarella cheese, and then 1/2 of the grated Pecorino Romano cheese, being sure to distribute evenly. Top with the rest of the pasta and sauce mixture and give the pan a little shake to settle the sauce. Repeat the cheese application.
  • Bake in the center of the preheated oven until the cheese is melted and the casserole is piping hot, 30 to 35 minutes. Remove from the oven and let cool 10 to 15 minutes before serving. Top with parsley.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the dish will taste. Use fresh vegetables, sharp cheddar cheese, and flavorful mushrooms.
  • Don't overcrowd the pan: When cooking the mushrooms, don't overcrowd the pan. This will prevent them from cooking evenly and will make them more likely to steam instead of brown.
  • Cook the pasta al dente: Al dente pasta is slightly firm to the bite. This will help it hold up better in the sauce and prevent it from becoming mushy.
  • Use a good quality cheese: The type of cheese you use will make a big difference in the flavor of the dish. Use a sharp cheddar cheese that has a bold flavor.
  • Don't overcook the sauce: The sauce should be cooked until it is heated through and the cheese is melted. However, do not overcook it, as this will make the sauce thick and gloopy.

Conclusion:

Ziti with sharp cheddar and mushrooms is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The combination of sharp cheddar cheese, flavorful mushrooms, and tender pasta is sure to please everyone at the table. This dish is also a great way to use up leftover chicken or vegetables. So next time you're looking for a quick and easy meal, give this ziti recipe a try.
