CREAMY GARLIC SEAFOOD PASTA

This seafood pasta with creamy garlic sauce is the perfect dinner recipe, whether you need to get dinner on the table fast or impress guests.

2 tbsp olive oil
250 g (½lb) shrimp / prawns (peeled and deveined)
150 g (5oz) mussel meat ((approximately 500g with shells) )
150 g (5oz) calamari tubes / squid heads
2 tbsp butter
4 garlic cloves (crushed)
½ tsp chilli flakes
½ cup white wine
1-2 tsp lemon juice
1 cup cream
salt and pepper (to taste )
½ cup parsley (finely chopped)
500 g (1lb) pasta (cooked + 1 cup cooking water reserved)

Steps:

  • In a large pan, add a splash of oil and allow to heat up.
  • Season the seafood with salt and pepper then cook in batches until golden brown.
  • The shrimp/prawns should take no more than a minute per side (depending on size) and the calamari and mussels will take only a few minutes to cook. Take care not to overcook the seafood as they will go tough and rubbery. Rather undercook slightly as it will cook a little more while being tossed with the sauce and pasta.
  • Remove the seafood from the pan and set aside.
  • In the same pan, melt the butter and add the garlic and chilli flakes. Cook until fragrant then pour in the lemon juice and wine.
  • Bring to a simmer and allow to reduce by half.
  • Pour in the cream and allow to come to a simmer. Allow to cook for 5 minutes or until the sauce coats the back of a spoon.
  • Add the seafood (and any of its resting juices) and parsley and stir to combine.
  • Toss the sauce with cooked pasta and a splash of the pasta cooking water and toss to coat the pasta. Serve sprinkled with parsley.

1/4 cup extra-virgin olive oil, plus more for drizzling
1 pound medium shrimp, peeled, deveined and tails removed
Freshly ground black pepper
8 ounces bay scallops or small sea scallops
12 ounces thin spaghetti
4 cloves garlic, thinly sliced
1/2 cup dry white wine
One 15-ounce can diced tomatoes
1/4 to 1/2 teaspoon crushed red pepper flakes
1/4 cup chopped fresh parsley
1/2 cup torn fresh basil leaves
Zest of 1 lemon, finely grated

Steps:

  • Bring a large pot of salted water to a boil.
  • Meanwhile, heat the olive oil in a large nonstick skillet over medium-high heat until it is shimmering. Season the shrimp with salt and pepper, add to the skillet and cook until lightly browned on both sides, about 3 minutes total; transfer to a plate. Season the scallops with salt and pepper, add to the skillet and cook undisturbed until nicely browned on the bottom, about 2 minutes. Give the scallops a quick stir and cook 1 minute, then transfer to the plate with the shrimp.
  • Add the spaghetti to the boiling water and cook according to the package directions for al dente. Strain, reserving 1/2 cup cooking water.
  • While the spaghetti cooks, reduce the heat to medium, add the garlic to the skillet and cook until softened and lightly browned, about 3 minutes. Add the wine and cook, stirring to scrape up any brown bits, until reduced by half, about 2 minutes. Add the tomatoes, red pepper flakes and 1/4 teaspoon salt and cook, stirring occasionally, until the sauce is slightly thickened, about 5 minutes. Add the pasta, shrimp, scallops and reserved cooking water and toss to combine. Continue cooking until the sauce coats the pasta and the seafood is heated through, about 2 minutes.
  • Turn off the heat, stir in the parsley and basil and divide among four serving bowls. Sprinkle with the lemon zest, drizzle with more olive oil if desired and serve.

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook, stirring frequently, until al dente, about 9 minutes. Drain the pasta and set aside.

So I kept adding certain ingredients until I was satisfied, and I ended up with the recipe posted here. I have added red pepper flakes on occasion too, but that makes the sauce a bit spicy and "over the top" for my kids.

1 lb ground Italian sausage or 1 lb beef
1/2 onion, chopped
2 tablespoons oil
2 -3 garlic cloves, minced
6 ounces mushroom pieces (reserve the liquid)
1/2 green pepper, chopped
28 ounces tomato sauce
6 ounces tomato paste
1/2 cup water or 1/2 cup mushroom juice
1 1/2 teaspoons minced parsley
1/8 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon sugar
1 1/2 teaspoons oregano
1 bay leaf
1 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco sauce (or more, to suit) (optional)

Steps:

  • In a medium skillet, brown the sausage (or beef) with the chopped onion until no pink remains in the sausage and the onion is transparent. Drain excess grease.
  • In the meantime, heat oil in a kettle or stock pot, and sauté the minced garlic, mushroom pieces, and green pepper in the oil until the pepper is tender. The time took longer for me because of the amount of shrimp I had to peel, but if you cut this recipe down, it won't take you so long. This time I also included crawfish. Oh ya'll gotta try it! 2 (16 ounce) packages extra-wide egg noodles
¼ cup extra-virgin olive oil, or as needed
1 onion, diced
1 green bell pepper, diced
2 stalks celery, diced
5 cloves garlic, diced
½ cup fresh parsley
1 ½ tablespoons chopped fresh sage
2 tablespoons chopped fresh basil
1 lemon, zested and juiced
2 (32 ounce) cartons seafood stock (such as Kitchen Basics®), divided
1 teaspoon dried thyme
1 tablespoon dried cilantro
½ teaspoon dried dill weed
sea salt and ground black pepper to taste
1 (12 ounce) package frozen peeled crawfish tails, thawed and undrained
2 pounds peeled and deveined small shrimp
3 tablespoons cornstarch
1 cup half-and-half
2 tablespoons Creole seasoning (such as Zatarain's®)

Steps:

  • Bring a large pot of generously salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, 5 to 10 minutes. Drain and transfer to a bowl.
