3 cups uncooked medium pasta shells
1 can (20 ounces) unsweetened pineapple chunks, drained
1 large navel orange, peeled, sectioned and halved
1 cup halved red grapes
1 cup halved green grapes
1 medium apple, chopped
1 large firm banana, cut into 1/4-inch slices
1 cup plain yogurt
1/4 cup orange juice concentrate

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place in a large bowl; add the fruit. Combine yogurt and orange juice concentrate; pour over salad and toss to coat. Cover and chill for several hours.

3 oz. (1 cup) uncooked rotini (spiral pasta)
1 cup quartered fresh strawberries
1 cup fresh pineapple chunks
1 cup seedless red grapes, halved
2 kiwi fruit, peeled, quartered lengthwise and cut into 1/4-inch slices
2 tablespoons slivered almonds, toasted if desired
1/2 cup low-fat vanilla yogurt
1/2 teaspoon grated lime peel
1 tablespoon lime juice
2 tablespoons honey

Steps:

  • Cook rotini to desired doneness as directed on package. Drain; rinse with cold water to cool. Drain well.
  • In large bowl, combine cooked rotini and all remaining salad ingredients; mix gently.

8 ounces uncooked elbow macaroni
3/4 cup fat-free plain yogurt
3/4 cup reduced-fat mayonnaise
4 teaspoons snipped fresh dill
1/4 teaspoon salt
Dash hot pepper sauce
2 medium tart green apples, chopped
2 medium red apples, chopped
1-1/2 cups seedless grapes
2 celery ribs, thinly sliced
1 can (15 ounces) mandarin oranges, drained
2 medium firm bananas, cut into 1/4-inch slices
1/2 cup chopped walnuts

Steps:

  • Cook pasta according to package directions. Rinse with cold water and drain. In a bowl, combine the yogurt, mayonnaise, dill, salt and hot pepper sauce. , In a large serving bowl, combine the pasta, apples, grapes, celery and mandarin oranges. This is my take on the recipe that is usually printed on the box of Acini de Pepi. It has become one of our favorites. I even will eat the left-overs for breakfast. You can substitute the mandarin orange juice instead of the pineapple juice. Prep time includes letting it set overnight in the fridge.

1 cup sugar
1/2 teaspoon salt
3 eggs, beaten
2 tablespoons flour
2 (11 ounce) cans mandarin orange sections, drained
1 (10 ounce) jar maraschino cherries, drained
3/4 cup shredded coconut
1 can crushed pineapple, drained reserving juice
1 can pineapple chunk, drained reserving juice
1 3/4 cups reserved pineapple juice
1 (8 ounce) bag miniature marshmallows
1 (8 ounce) container Cool Whip
1 (16 ounce) box acini di pepe pasta, cooked and drained

Steps:

  • Cook sugar, salt, eggs, flour and pineapple juice until thick and bubbly, cool.
  • When cooked mixture is fully cooled, pour over pasta.
  • Mix well, cover and store in fridge overnight.

1 (15 ounce) can mandarin oranges
2 (20 ounce) cans pineapple tidbits (can also use chunks)
1 (6 ounce) jar maraschino cherries
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon flour
2 beaten eggs
1 lb acini di pepe pasta
1 (10 ounce) container Cool Whip (can use Lite or Fat Free)

Steps:

  • Drain the fruit, saving the juices.
  • Combine fruit juices with sugar, salt, flour, and eggs.
  • Cook until the mixture boils, stirring often so you don't scramble the eggs; remove from heat.
  • As this cooks, cook pasta according to package directions; drain and rinse with cold water.
  • Pour the still warm cooked fruit juice over hot pasta and stir.
  • Let come to room temperature, then refrigerate overnight.
  • Remove the Cool Whip to the refrigerator to soften for the next day.
  • The next day, combine the Cool Whip and all the fruit.
  • Keeps for a week.
  • TIPS: You may want to add about 1/2 the container of Cool Whip to the fruit to start with, then add more if it's too dry.
  • You may also want to drain the fruit again right before you add it, this time NOT adding the juices to the mixture.

16 oz whole grain pasta (shells or rotini)
1 1/2 c canalope melon
1 1/2 c honeydew melon
1 1/2 c pineapple ( 1" cubes)
1 1/2 c fresh red seedless grapes (halved)
6 large strawberries, fresh
8 oz cream cheese
4 Tbsp limeade, frozen
2 Tbsp honey

Steps:

  • 1. Boil pasta in sugared water as directed on package for al dente. I add about 1/8c sugar to my water while boiling the pasta. That way the pasta is sweet not salty.
  • 2. Drain & cool pasta. Do Not rinse.
  • 3. While pasta is cooling cut fruit. If I am in a hurry I buy cut fruit in the produce department. Cut the grapes in half. It is just easier to eat. Set fruit aside.
  • 4. In a bowl mix cream cheese, limeaid and honey until smooth.
  • 5. In a large bowl combine all ingredients. (Pasta & fruit). Mix well but don't break up pasta. Now add your cream cheese dressing. You want is well dressed but not soupy. Refrigerate until ready to enjoy.

I just suggest that you DO NOT SUBSTITUTE ON THE DRESSING AND SALAD SEASONING. I have given out this recipe before and have to stress that since many did not use those. Using an assortment of peppers is great for the color.
