Time 30m

Yield 12 muffins

Number Of Ingredients 9

2 cups all-purpose flour (I use 1 cup white and 1 cup wheat)
3/4 cup sugar
2 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
1/2 cup vegetable oil
2 eggs
1 1/2 cups berries (any type you want or a combination...I like a blueberry and raspberry combination. Fresh is best but)

Steps:

  • Mix dry ingredients together.
  • In a separate bowl, mix milk, oil, and eggs.
  • Stir into dry ingredients.
  • Mix until just blended.
  • Don't mix until smooth, batter should be a little lumpy.
  • Fold in berries.
  • Divide mixture evenly into greased large muffin tins.
  • Bake in a preheated 400 degree oven 15-18 minutes or until toothpick comes out clean.

Tips:

- For the best flavor, use fresh, ripe berries. Frozen berries can also be used, but they should be thawed and drained before adding them to the batter. - Use a variety of berries for a more complex flavor. Some good combinations include strawberries and blueberries, raspberries and blackberries, or cranberries and oranges. - Be careful not to overmix the batter. Overmixing can result in tough muffins. - Fill the muffin cups only about 2/3 full. This will allow the muffins to rise properly. - Bake the muffins until a toothpick inserted into the center comes out clean. - Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

These yummy berry muffins are a delicious and easy-to-make breakfast, snack, or dessert. They are perfect for any occasion and can be customized to your liking. With so many different variations to try, you're sure to find a muffin recipe that you love.
