Steps:
- Whisk the vinegar, mustard, lemon juice, garlic, olive oil, salt, and pepper in small bowl to blend. Combine the vinaigrette and chicken pieces in a large resealable plastic bag; seal the bag and toss to coat. Refrigerate, turning the chicken pieces occasionally, for at least 2 hours and up to 1 day.
- Preheat the oven to 400 degrees F. Remove chicken from the bag and arrange the chicken pieces on a large greased baking dish. Roast until the chicken is just cooked through, about 1 hour. If your chicken browns too quickly, cover it with foil for the remaining cooking time. Transfer the chicken to a serving platter. Place the baking dish on a burner over medium-low heat. Whisk the chicken broth into the pan drippings, scraping up any browned bits on the bottom of the baking sheet with a wooden spoon and mixing them into the broth and pan drippings. Drizzle the pan drippings over the chicken. Sprinkle the lemon zest and parsley over the chicken, and serve.
YUMMY BALSAMIC VINAIGRETTE CHICKEN BREASTS
I had this in a pile with other recipes. I am marinating my chicken now and will prepare this for dinner this evening. I'm posting it for safe keeping. To save calories, you could substitute chicken broth for the olive oil. Prep time does not include marinating time in the refrigerator.

Tips:
- Opt for high-quality balsamic vinegar. A good balsamic vinegar will have a thick, syrupy consistency and a rich, complex flavor.
- Use fresh herbs and spices. Fresh herbs and spices will add a lot of flavor to your chicken breasts. Some good options include basil, oregano, thyme, rosemary, garlic, and onion powder.
- Don't overcrowd the pan. If you overcrowd the pan, the chicken breasts will not cook evenly. Make sure there is enough space between each chicken breast so that they can cook properly.
- Cook the chicken breasts over medium-high heat. This will help to sear the chicken breasts and keep them juicy.
- Baste the chicken breasts with the balsamic vinegar mixture frequently. This will help to keep the chicken breasts moist and flavorful.
- Let the chicken breasts rest before serving. This will help to keep the juices in the chicken breasts and prevent them from drying out.
Conclusion:
Balsamic vinegar chicken breasts are a delicious and easy-to-make dish that is perfect for a weeknight dinner. The balsamic vinegar adds a rich, tangy flavor to the chicken breasts, and the herbs and spices give them a lot of flavor. This dish is sure to be a hit with your family and friends.
