Number Of Ingredients 7

1-1/4 cups warm water (110° to 115°), divided
1 cup yellow cornmeal
1/4 cup nonfat dry milk powder
3 tablespoons butter, softened
2 tablespoons sugar
1-1/2 teaspoons salt
2-1/4 to 2-3/4 cups all-purpose flour

Steps:

  • 1. In a large bowl, dissolve yeast in 1/4 cup warm water. Add the cornmeal, milk powder, butter, sugar, salt, 1-1/4 cups flour and remaining water. Beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down; shape into a loaf. Place in a 9-in. x 5-in. loaf pan coated with cooking spray. Cover and let rise until doubled, about 30 minutes. Bake at 375° for 35-40 minutes or until golden brown. Remove from pan to a wire rack to cool. Yield: 1 loaf (16 slices).

Tips:

  • To ensure the best flavor and texture, use fresh, high-quality ingredients. If possible, use organic or locally-sourced ingredients.
  • Make sure the yeast is active before using it. To test the yeast, combine 1 teaspoon of sugar and 1 teaspoon of warm water in a small bowl. Sprinkle the yeast over the mixture and let it sit for 5-10 minutes. If the yeast is active, it will start to foam and bubble.
  • Knead the dough until it is smooth and elastic, about 5-7 minutes. This will help to develop the gluten in the dough, which will give the cornbread a chewy texture.
  • Let the dough rise in a warm place until it has doubled in size, about 1 hour. This will give the yeast time to ferment and produce carbon dioxide gas, which will cause the dough to rise.
  • Bake the cornbread in a preheated oven until a toothpick inserted into the center comes out clean, about 30-35 minutes. This will ensure that the cornbread is cooked through.
  • Let the cornbread cool slightly before slicing and serving. This will help to prevent the cornbread from crumbling.

Conclusion:

Yeast cornbread is a delicious and versatile bread that can be enjoyed for breakfast, lunch, or dinner. It is a great way to use up leftover cornmeal, and it can also be made with other flours, such as wheat flour or all-purpose flour. With a few simple ingredients and a little time, you can make a delicious and satisfying loaf of yeast cornbread that the whole family will enjoy.
