½ cup margarine, softened
1 cup white sugar
2 eggs
1 ½ cups mashed banana
2 cups all-purpose flour
1 teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch pan.
  • Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined.

2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ cup butter
¾ cup brown sugar
2 eggs, beaten
2 ⅓ cups mashed overripe bananas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

1-3/4 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
2 medium ripe bananas, mashed (1 cup)
1/2 cup canola oil
1/4 cup plus 1 tablespoon buttermilk
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, stir together flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts. , Pour into a greased or parchment-lined 9x5-in. loaf pan. If desired, sprinkle with additional walnuts. Bake until a toothpick comes out clean, 1-1/4 to 1-1/2 hours. Cool in pan for 15 minutes before removing to a wire rack.

2 eggs
1 teaspoon vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup sour cream
1/2 cup chopped walnuts (optional)
2 -3 bananas (the banana peel should be nearly all brown)

Steps:

  • Preheat oven to 350 degrees.
  • Grease a loaf pan.
  • In a large mixing bowl, with an electric mixer, beat together the butter, sugar, eggs, vanilla extract, baking soda, baking powder, sour cream and bananas.
  • Slow beat in the flour until well mixed.
  • Fold in walnuts.
  • Pour into greased pan and bake for 45 - 55 minutes (depending on the size of the pan and how many loaves are baked at once).
  • Start checking around 45 minutes by inserting a toothpick into the middle of the bread. The bread is done when the toothpick comes out clean.

1 1/2 cups all-purpose flour
1/2 cup wheat bran
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup butter
1/4 cup applesauce
6 tablespoons Splenda brown sugar blend
2 large eggs, beaten
2 1/2 cups mashed bananas, very overripe (I used 4 medium bananas the first time)
1/2 cup chocolate chips (optional)

Steps:

  • Preheat oven to 350°F
  • Lightly grease a 9 x 5 loaf pan.
  • In a large bowl, combine the flour, baking soda and salt.
  • In a separate bowl, cream together the butter and brown sugar.
  • Stir the eggs, applesauce and mashed bananas into the butter mixture until well blended.
  • Stir the banana mixture into flour mixture just to moisten.
  • Pour the batter into the prepared loaf pan.
