Steps:
- Preheat oven to 450 degrees.
- Mix the marinade: olive oil, garlic, paprika, cumin, red pepper, cilantro (or parsley), salt, and pepper in a bowl. Using zip-top bags or a large container suitable for marinating, combine marinade, chicken, beans, and tomatoes, ensuring that everything, especially the chicken, is evenly coated with the marinade. Let marinate a few hours, all day, or overnight.
- When ready to cook, dump contents into large roasting pan. Roast 20-30 minutes, or until chicken is cooked through and browned, and tomatoes have burst and caramelized.

Steps:
- *Preheat oven to 500ºF. *Heat a saute pan lare enough to hold the 4 pieces of chicken on high heat. As it heats, season both sides of the chicken with salt and pepper. Add oil to the pan, swirl and when very hot and smoking, add chicken breasts, skin side down. Leave on flame for another minute or two until pan is again very hot, then place the pan in the oven. *When golden brown and crispy (about 3-4 minutes) turn. Continue to turn about every 3-4 minutes and continue to cook until done. Remove to a warm plate. *Add squash to the pan and place in the oven. Preheat stovetop burner to high if needed. Cook in oven for 3-4 minutes until slightly browned, then place pan back on the burner. Add remaining vegetables and saute until slightly browned. Add stock, brown sugar, sage and bring to a boil. After thickened, add butter.(can cut in half) Season to taste with salt and pepper. * Divide vegetables between plates, add chicken breast, drizzle with sauce and garnish with the shaved parmesan.
