1 ¼ cups butter, softened
½ cup unsweetened cocoa powder
2 cups white sugar
4 eggs
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ cups chopped walnuts
2 teaspoons vanilla extract
1 (7 ounce) jar marshmallow creme
½ cup milk
3 cups confectioners' sugar
⅓ cup unsweetened cocoa powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch cake pan.
  • In a large sauce pan over low heat, melt 1 cup of the butter with the cocoa. Stir often. Remove from heat and add white sugar, beat well. Beat in eggs one at a time.
  • Combine flour, baking powder, and salt and stir into the egg mixture. Stir in the chopped nuts and 1 teaspoon vanilla. Pour batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes. Remove cake from oven and spread the marshmallow cream over the cake. Spoon chocolate icing over marshmallow topping while the cake is still hot and spread. The cake will get "muddied" by the spreading action.
  • To Make Icing: Beat together the remaining 1/4 cup butter, 1/3 cup cocoa, 1 teaspoon vanilla, the milk, and the confectioner's sugar. Once well combined spoon over the still hot cake.

CAKE
1/2 c cocoa
1 c (2 sticks) butter melted, plus extra butter for greasing pan
4 eggs,beaten
1 1/2 c all purpose flour
2 c sugar
1/8 tsp salt
1 tsp vanilla extract
1 1/2 c pecans, in pieces
FROSTING:
1 box 16 oz. light brown sugar
1/3 c cocoa, unsweetened
1/2 c 1 stick butter (softened)
1/2 c milk (scalded)
1 tsp pure vanilla extract
1 pkg (10.5 oz.) miniature marshmallows

Steps:

  • 1. Preheat oven 350 degrees.Grease a 9x13x2-inch pan with butter.
  • 2. CAKE:
  • 3. In a large mixing bowl,stir togethter the cocoa and the melted butter.
  • 4. Add the eggs,flour,sugar,salt,and vanilla.
  • 5. Beat well with electric mixer. Add pecans,stirring with rubber spatula. Pour batter into the prepared pan. Bake for 35 min.
  • 6. FROSTING:
  • 7. While cake is baking, prepare the frosting.
  • 8. Beat the brown sugar and softened butter.
  • 9. Add the cocoa and beat.
  • 10. Stir in the scalded milk and vanilla,beat with mixer until smooth. Set aside
  • 11. Remove cake from oven,pour marshmallows over cake while it is still hot. Pour frosting over marshmallows. Let cool slightly before cutting.
  • 12. I like to serve this cake warm, so I put it in the oven when we get though eating. ( my family likes to wait and hour or so after dinner to have dessert)
