Taste for seasonings and serve at room temperature.
WILD RICE HAM SALAD
Wild rice is native to the Midwest, so this dish is popular in our area. We eat it cold or warm it up just enough to soften the cheese and blend the flavors a little more. Serve it as the main event or even as a side for chicken or turkey. -Kathi Saari, Ames, Iowa

CHICKPEAS AND RICE
This is a recipe that I got from a vegetarian cookbook and made a few modifications to. We have fallen for this dish and now make it a few times a month. My two year old also loves it. We tried it out on some non-vegetarians and they all loved it.

Steps:
- Bring the wild rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender but not mushy, 20 to 45 minutes depending on the variety of wild rice. Drain off any excess liquid, fluff the rice with a fork, and cook uncovered 5 minutes more. Scrape into a mixing bowl, and refrigerate until cold.
- Whisk the vinegar, mustard, sugar, salt, garlic, dried tarragon, black pepper, and red pepper flakes in a small mixing bowl until smooth. Pour the safflower oil into the dressing in a thin, steady stream while whisking vigorously until the oil has been fully incorporated into the dressing; set aside. Stir the chicken, celery, parsley, and green onion into the cooled wild rice. Stir in the dressing until evenly blended. Cover the rice mixture, and refrigerate 4 hours to overnight.
- Bring a small saucepan of lightly salted water to a boil. Add the sugar snap peas, and cook uncovered until just tender, about 30 seconds. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the peas are cold, drain and cut into 1-inch diagonal pieces. Refrigerate until ready to serve. Stir the peas and toasted almonds into the rice mixture just before serving.

WILD RICE AND CHICKPEA SALAD WITH HAM
Steps:
- 1. Fill a large saucepan three-quarters full of water and bring to a boil. Add the wild rice and 1 tablespoon of salt and simmer over moderate heat until the rice is tender and most of the grains have just split, 50 minutes. Drain and rinse the rice under cold water, then drain again. 2. Meanwhile, in a large bowl, whisk the lemon juice, vinegar, mustard, honey, curry powder, cumin and cayenne. Add the olive oil and whisk until combined. Toss in the chickpeas, ham, scallions, raisins and wild rice. Season the salad with salt, pepper and hot sauce, transfer to a bowl and serve.
Tips:
- For the best flavor, use high-quality ham. Look for a ham that is smoked and cured, with a deep pink color and a slightly salty flavor.
- If you don't have any cooked ham, you can easily cook some in a skillet over medium heat until it is browned and cooked through.
- Feel free to add other vegetables to this salad, such as chopped celery, carrots, or bell peppers.
- This salad can be served warm or cold. If you are serving it warm, let it cool slightly before adding the dressing.
- If you are making this salad ahead of time, store the dressing and the salad separately. Then, when you are ready to serve, toss the salad with the dressing and serve.

This wild rice and chickpea salad with ham is a delicious and healthy dish that is perfect for a summer picnic or potluck. It is also a great way to use up leftover ham. The salad is packed with protein, fiber, and vitamins, and it is sure to please everyone at your table.
