2 tsp Sea salt
1 tsp Black pepper
1/2 cup Mayonnaise ((or even better, lemon garlic aioli))
1/4 cup Grated parmesan cheese
1 medium Lemon ((cut into 1/4-inch slices))
Fresh parsley ((optional, for garnish))

Steps:

  • Make lemon garlic aioli according to the instructions here.
  • Preheat oven to 450 degrees F (232 degrees C).

1/2 pound Pomodoro confit tomatoes, recipe follows
1/2 pound crab meat
2 tablespoons Worcestershire sauce
1 tablespoon olive oil
1 celery stalk, shredded
1/2 pound Pomodoro tomatoes
1 cup sugar

Steps:

  • Begin by slicing the salmon fillet into 4 equal sections. Slice each section in half to make 2 thin layers.Using a square 2 by 2-inch cutter, place a piece of salmon at the bottom. Add a layer of tomato confit, a layer of crab meat, and top with another layer of salmon. Repeat this process with all of the salmon, to make 4 millefeuille. Combine the Worcestershire sauce and the olive oil and mix. Place the salmon squares in the center of each plate, top with shredded celery, and drizzle the Worcestershire sauce mixture around the plate.
  • Preheat oven to 200 degrees F. Slice the tomatoes in half and place them pulp-side up on a baking sheet. Sprinkle the sugar over the tomatoes, place them in the oven and allow them to dry out for approximately 2 hours.

1 1/2 cups elbow macaroni, or small shells (3 cups cooked)
2/3 cup olive oil
1/4 white wine vinegar
1/4 cup finely diced green bell pepper
1/4 cup finely diced pimento
Boston lettuce leaves, washed
1/2 cup mayonnaise
1 tablespoon Dijon mustard
2 cups cooked turkey, cut into 3/4-inch dice
2 hard boiled eggs, peeled and chopped
2 tablespoons finely sliced scallion

Steps:

  • Boil the pasta in salted water. When done remove, drain and refresh under cold water to stop the cooking process. While pasta is cooking, make a dressing by whisking together the olive oil and vinegar and season well, to taste, with salt and pepper. Add the bell pepper and pimento and toss with the elbows. Set elbows in a wreath over washed Boston lettuce.
  • Also make a dressing with the mayonnaise and Dijon mustard and combine with cooked turkey. Center this in middle of elbow macaroni wreath and garnish with chopped hard boiled egg and scallions.

1 large egg yolk (from a pasteurized egg)
1 tablespoon white wine vinegar or champagne vinegar
Kosher salt
1/2 cup vegetable or grapeseed oil
1/2 cup extra-virgin olive oil

Steps:

  • Whisk the egg yolk, vinegar and 1 tablespoon water in a medium nonreactive heatproof bowl (glass or ceramic). Fill a large bowl with ice water and set aside. Bring 2 inches water to a simmer in a saucepan over medium-low heat.
  • Set the bowl with the yolk mixture over the saucepan (do not let the bowl touch the water). Slowly whisk until a thermometer inserted into the yolk mixture registers 150 degrees F, 4 to 5 minutes.
  • Set the bowl with the yolk mixture in the ice water to stop the cooking; whisk just until the mixture is lukewarm (do not let it get cold).
  • Put the bowl with the yolk mixture on a damp towel. Add 1/4 teaspoon salt. Combine the oils in a measuring cup. Whisking constantly, slowly drizzle the oil into the bowl in a thin stream until smooth and thick. If at any point the oil is not emulsifying into the mixture, stop adding the oil and whisk to combine before continuing. Whisk in 1 to 2 teaspoons water if the mayonnaise is too thick. Season with salt. Cover and refrigerate up to 4 days.

1 clove garlic, lightly smashed
2 bay leaves
1 12-ounce container pico de gallo or fresh salsa (1 1/2 to 1 3/4 cups)
3 5-ounce cans solid white tuna packed in water, drained
1 cup lightly packed fresh parsley, chopped (about 1 small bunch)
1 small head romaine lettuce, thinly sliced

Steps:

  • Preheat the oven to 450 degrees F. Whisk the mayonnaise, lime juice, chile powder and 1 tablespoon water in a small bowl; cover and refrigerate. Put the tostadas on a baking sheet and bake until crisp, 5 minutes.

1 small garlic clove, peeled

6 large handfuls salad greens, about 3/4 pound

Steps:

  • Measure the vinegar into a small bowl. Crush the garlic clove and add it to the vinegar, along with 1/2 teaspoon salt. After 10 minutes or so, whisk in the olive oil and a little freshly milled pepper. Taste and adjust the seasoning. Make the vinaigrette no more than a couple of hours before serving.
  • Pick over the salad greens, discarding any tough outer leaves, or any that are wilted or blemished. (If you are using young head lettuces, trim the root ends with a sharp paring knife to free the leaves.) Fill a large basin with cold water and gently submerge the greens, allowing sand and grit to sink to the bottom. Lift the lettuces from the water and drain them in a colander, then dry them in a salad spinner. Wrap the leaves in clean cotton toweling and refrigerater in an airtight container.
  • To serve, put the greens in a wide salad bowl and season with a small pinch of salt. Remove the garlic clove, whisk the vinaigrette, toss the greens lightly with just enough dressing to make the leaves glisten. (Your hands make the best salad-tossing tools.) 1 tbsp olive oil
4 sea bass fillets
lemon wedges , to serve
200g vegetable oil
100g wild garlic leaves, chopped
1 egg , yolk only
1 tbsp Dijon mustard
3 anchovies

Steps:

  • To make the wild garlic mayo, heat the oil in a pan, then tip into a blender with the wild garlic. Blend for 2 mins, then pass the oil through a sieve into a jug. Put the yolk in a medium bowl with the mustard. Gradually whisk the green oil into the yolk until it thickens. Whisk in the anchovies and a pinch of salt. Put in the fridge. Can be made a day ahead.
  • Heat the oil in a non-stick frying pan and add the fish, skin-side down. Season with salt and cook over a medium heat for 4 mins, pressing down with a spatula, until the flesh has changed colour and the edges look golden. Turn over and cook for another 1 min. Once cooked, put on a serving plate, spoon on the mayo and serve with lemon wedges.
