BASIC WHITE BREAD 1 1/2 LB LOAF

BASIC WHITE BREAD 1 1/2 LB LOAF image

Great small loaf of light airy white bread. Great for sandwiches, toast, etc. Let your bread machine do the hard work but bake in a bread pan in your oven for a better looking loaf. I use a 4 1/2" x 8 1/2" pan because I like it to rise high above the pan but you can use a 5" x 9" pan if you prefer a loaf that isn't as tall. For a great bun recipe try my "Hamburger Buns, Hotdog Buns, or Dinner Rolls" http://www.food.com/recipe/hamburger-buns-hotdog-buns-or-dinner-rolls-532275 recipe also on this site.

Time 3h5m

Yield 1 1 1/2 lb loaf

Number Of Ingredients 7

1 cup warm water (236.59g, 110 degrees F/45degrees C)
2 tablespoons white sugar
1 (1/4 ounce) package bread machine yeast (2 1/4 teaspoons instant yeast)
4 tablespoons vegetable oil
3 cups white bread flour (384g)
1 teaspoon salt
3 tablespoons butter, melted

Steps:

  • 1. Place the water into the bread machine pan.
  • 2. Add sugar and oil to water and stir to dissolve sugar. Add yeast to the water and stir to dissolve.
  • 3. Allow the yeast to foam for 10 minutes.
  • 4. Mix together flour and salt and add to bread machine pan.
  • 5. Select the dough cycle and press start and allow to complete full cycle including first rise.
  • 6. Always check your dough mid way through the kneading cycle and adjust with either water or flour for proper consistency. The dough will sometimes have to be adjusted due to humidity, temperature, and variations in flour.
  • 7. Spray an 8 ½" x 4 ½" bread pan with cooking spray.
  • When dough cycle is complete transfer dough to lightly floured surface and gently deflate.
  • Knead 6 or 8 times, turning 90 degrees each time.
  • Shape the dough into an 8" log.
  • Place the log in a lightly greased 8 1/2" x 4 1/2" loaf pan, cover the pan loosely with parchment paper or lightly greased plastic wrap, and allow the bread to rise for 45 to 60 minutes or until ripe. Dough is ready to bake when your index finger pressed into the dough up to first joint leaves a mark that rebounds slowly. It will rise pretty high using a 4 1/2" x 8 1/2" pan. Towards the end of the rise, preheat your oven to 350°F.
  • Brush with half the melted butter. Bake the bread for 30 to 35 minutes, until it's light golden brown. Test it for doneness by removing it from the pan and thumping it on the bottom (it should sound hollow), or by measuring its interior temperature with a digital thermometer (it should register 190°F at the center of the loaf).
  • Remove the bread from the oven. Brush with remaining melted butter. Remove from pan and cool it on a rack before slicing. Store the bread in a plastic bag at room temperature for several days; freeze for longer storage.

WHITE BREAD SANDWICH LOAF

Categories     side-dish

Time 4h30m

Yield 1 loaf

Number Of Ingredients 7

2 cups plus 2 tablespoons whole milk
3 tablespoons unsalted butter
2 tablespoons sugar
One 1/4-ounce package active dry yeast
5 cups unbleached all-purpose flour
1 tablespoon plus 1 teaspoon fine salt
Oil as needed

Steps:

  • In a small saucepan, combine the milk, butter, and the sugar. Place over medium-high heat and cook, stirring, until the butter has melted. Remove from the heat and cool to about 110 degrees F. Sprinkle the yeast over the surface of the milk. Set aside until foamy, about 10 minutes.
  • Meanwhile, in large bowl, whisk together the flour and salt and set aside.
  • Pour the milk and yeast mixture into the bowl of flour and mix until a soft, ragged mixture is formed. Transfer the flour mixture to a well-floured work surface and knead until a soft elastic dough is formed, about 10 minutes.
  • Transfer the dough to a lightly oiled bowl, cover with a kitchen towel, and place in a warm spot in the kitchen, until puffed and doubled in size, about 2 hours.
  • Transfer the dough to the work surface and, using your hands, gently flatten into a 10-inch-long oval shape. Fold the dough into thirds lengthwise, overlapping the sides in the center. Press down on the overlapping side to seal and make a seam. Place seam side-down in a buttered 9x5 loaf pan, cover with a kitchen towel, and return to the warm spot until the dough has just risen about 1 1/2 inches over the top of the pan, about 2 to 2 1/2 hours.
  • Place a rack in the center of the oven and preheat to 400 degrees F. Brush the top of the dough lightly with warm water and, using a sharp knife, make 1/4-inch-deep slit down the center. Bake until golden brown, about 30 minutes.
  • Remove the loaf from the pan and place in the center of the rack. Continue baking until the loaf sounds hollow when rapt lightly with your knuckles, on the bottom and top, or an instant read thermometer inserted in the center registers about 190 degrees F., about 15 minutes.
  • Transfer the bread loaf to a cooling rack and cool completely before slicing.

GERMAN KASTENWEISSBROT (WHITE LOAF BREAD)

German Kastenweissbrot (White Loaf Bread) image

I translated this recipe from "Brot Backen," a German language cookbook I acquired while living in Germany. I used to buy this bread weekly from the bakery in our town and had to track down a recipe for it. I will update the measurements for American kitchens once I have tried this. At the bakery they had little bottles of water that they would spray onto the raw dough before baking to make the tops crispy.

Time 3h40m

Yield 1 loaf, 8-10 serving(s)

Number Of Ingredients 9

500 g all-purpose flour, approximately
4 1/2 teaspoons active dry yeast
1 teaspoon granulated sugar
1 teaspoon salt
2 large eggs
1 egg yolk
100 ml lukewarm milk
150 g creme fraiche or 150 g sour cream
breadcrumbs, for the pan

Steps:

  • Measure out the milk and add yeast and sugar; set aside for about 10 minutes or until frothy (if it doesn't get frothy, start over- your yeast is dead or your milk was too hot and killed the yeast).
  • Mix together the yeast mixture with salt, eggs and egg yolk, creme fraiche.
  • Combine the flour and the wet mixture until a dough forms (you may need a little extra flour depending upon the humidity that day).
  • Knead on a floured board, adding extra flour if needed to keep from being too sticky, until a smooth ball forms.
  • Place in a greased bowl, flip over once, and cover with either a damp clean towel or plastic wrap that has first been srayed with nonstick spray.
  • Let rise until doubled in bulk- approx 1 or 1 1/2 hours.
  • Punch down and knead again on a floured surface.
  • Grease a 30cm long loaf pan well and sprinkle with dry breadcrumbs.
  • Set dough into the pan and even out the top.
  • Cover as before and let rise another hour.
  • Heat oven to 175 C.
  • Remove cover and using a sharp knife, make slashes in the dough every 1 cm.
  • Spritz with a bit of water (this will make the crust crisp up).
  • Bake on the second rack of your oven for about 40 minutes.

Tips:

  • Measure your ingredients accurately: This is important for any baking recipe, but especially for bread. A kitchen scale is the most accurate way to measure ingredients, but if you don't have one, use measuring cups and level them off with a knife.
  • Use fresh ingredients: The fresher your ingredients, the better your bread will taste. This is especially true for the yeast. If your yeast is old, it may not be active enough to leaven the bread properly.
  • Proof the yeast before using it: This is a step that is often skipped, but it's important to make sure that your yeast is active before you add it to the dough. To proof the yeast, dissolve it in warm water with a little sugar. Let it sit for 5-10 minutes, until it becomes foamy. If the yeast does not foam, it is not active and you should discard it.
  • Knead the dough properly: Kneading the dough helps to develop the gluten, which gives bread its structure. Knead the dough for at least 5 minutes, or until it is smooth and elastic.
  • Let the dough rise in a warm place: The ideal temperature for rising dough is between 75 and 85 degrees Fahrenheit. If your kitchen is too cold, the dough will not rise properly. You can place the dough in a warm oven with the light on, or you can set it in a warm spot in your house, such as near a radiator.
  • Bake the bread at a high temperature: Bread should be baked at a high temperature, between 375 and 400 degrees Fahrenheit. This will create a crispy crust and a fluffy interior.

Conclusion:

Making white bread from scratch is a rewarding experience. With a little practice, you can create a delicious and nutritious loaf of bread that your family and friends will love. These tips will help you to make sure that your bread turns out perfect every time.
