Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 15

3 tablespoons good olive oil
3 cups chopped fennel (1 large bulb)
1 1/2 cups chopped yellow onion
1 1/4 pounds sweet Italian sausages, casings removed
2 teaspoons minced garlic (2 cloves)
1/2 teaspoon whole fennel seeds, crushed with a mortar and pestle
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 cup dry white wine
1 cup heavy cream
2/3 cup half-and-half
2 tablespoons tomato paste
1 pound rigatoni
1/2 cup chopped fresh parsley leaves
1 cup freshly grated Italian Parmesan cheese, divided

Steps:

  • Heat the olive oil in a large heavy pot or Dutch oven, such as Le Creuset, over medium heat. Add the fennel and onion and saute for 7 minutes, stirring occasionally, until tender. Add the sausage and cook for 7 to 8 minutes, crumbling it with a fork, until nicely browned. Add the garlic, crushed fennel seeds, red pepper flakes, 2 teaspoons salt, and 1 teaspoon black pepper and cook for one minute. Pour in the wine, bring to a boil, and add the heavy cream, half-and-half, and tomato paste. Bring back to a boil, lower the heat, and simmer for 20 minutes, until the sauce has thickened.
  • Meanwhile, bring a large pot of water to a boil, add 2 tablespoons salt, and cook the rigatoni according to the directions on the package. Drain and add to the sauce, stirring to coat the pasta. Cook over low heat for 5 minutes to allow the pasta to absorb the sauce. Off the heat, stir in the parsley and 1/2 cup of the Parmesan. Serve hot in shallow bowls with the remaining 1/2 cup Parmesan on the side.

Time 35m

Yield 4 serving(s)

Number Of Ingredients 6

2 cups rigatoni pasta (8 oz)
15 ounces great northern beans or 15 ounces navy beans, rinsed and drained
14 1/2 ounces stewed tomatoes (Italian style, undrained)
8 ounces smoked turkey sausage, cooked and halved lengthwise and cut into 1/2-inch slices
1/3 cup fresh basil (thinly sliced) or 1 tablespoon dried basil (crushed)
1/4 cup asiago cheese (shredded) or 1/4 cup parmesan cheese (shredded)

Steps:

  • Cook pasta according to package directions. Drain and return pasta to saucepan.
  • Meanwhile, in a large saucepan combine beans, undrained tomatoes, sausage, and basil.
  • Cook and stir until heated through.
  • Add bean mixture and fresh basil to pasta.
  • Stir gently to combine.
  • To serve, sprinkle each with serving of cheese.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final dish. Look for high-quality sausage, beans, and vegetables.
  • Don't skimp on the garlic: Garlic is a key flavor component in this dish, so don't be afraid to use a lot of it. Minced garlic is best, but you can also use garlic powder if you don't have any fresh garlic on hand.
  • Cook the sausage until it's browned: This will help to develop its flavor and prevent it from becoming greasy.
  • Drain the beans and rinse them before using: This will help to remove any excess starch and make the beans more flavorful.
  • Use a good quality pasta: Rigatoni is a great choice for this dish because it holds the sauce well and is sturdy enough to stand up to the sausage and beans.
  • Don't overcook the pasta: Cook the pasta according to the package directions, or until it is al dente (slightly firm to the bite). Overcooked pasta will be mushy and unpleasant.
  • Serve the dish immediately: This dish is best served hot, so make sure to have everything ready before you start cooking.

Conclusion:

This white bean and sausage rigatoni is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is packed with flavor and is sure to please everyone at the table. So next time you are looking for a quick and easy pasta dish, give this one a try.
