4lb leg of lamb
6 tablespoons Welsh clover honey
Sprig of rosemary
Salt and freshly ground pepper
1/2 pint cider

Steps:

  • Set oven to 400F or Mark6. Place the leg of lamb on kitchen foil in a roasting tin. Brush with 4 tablespoons of warm honey and season with salt and pepper. Place the sprig of rosemary on top of the joint. Draw uo the foil to form a tent and roast for 15 minutes. Lower the heat to 350F or Mark4 and continue roasting for 15 minutes. 1/2 tsp salt
1 tsp black pepper
1 tsp ground ginger
2 Tbsp fresh rosemary, lightly chopped
2 Tbsp fresh thyme, lightly chopped
2/3 cup honey
1 cup apple cider

  • 1. Preheat oven to 425°F. Line an oven-proof baking dish with foil.
