Categories     Side Dish

Time 10m

Number Of Ingredients 14

1 pound Grated Carrots (trimmed, peeled equivalent to 4 cups, 10 medium carrots)
1/2 cup Golden Dried Raisins
6 tablespoons Toasted Nuts And Seeds (I used 2 Tbsp of each: pumpkin seeds, sliced almonds, and chopped pecans.)
2 tablespoons Fresh Parsley (finely chopped)
1/4 cup Extra-Virgin Olive Oil
1 teaspoon Dijon Mustard
2 tablespoons Lemon Juice
1 tablespoon Orange Juice
1/4 teaspoon Garlic Powder
1/2 teaspoon Maple Syrup
3/4 teaspoon Salt
1/4 teaspoon Cumin
1/4 teaspoon Turmeric
1/2 teaspoon Curry Powder

Steps:

  • First, add the nuts and seeds in a non-stick frypan and toast for 2-3 minutes until fragrant. Season with salt. Remove from heat and cool down in a bowl.
  • Trim, peel carrots - I use about 10 small carrots for this recipe.
  • Grate on the small grater attachment of your food processor or hand grater.
  • Place the grated carrot in a large salad bowl. Set aside in the fridge.
  • Make the salad dressing: add all the salad dressing ingredients to a bowl and whisk to combine. Set aside at room temperature.
  • To assemble the salad, top the grated carrots with dried raisins, chopped fresh parsley, toasted seeds, and nuts and add the dressing all over. Stir to evenly blend flavors.
  • Refrigerate an hour to increase flavor or serve immediately.

Number Of Ingredients 7

1/2 cup raisins
2 cups carrots, shredded
1/4 cup crushed pineapple, drained
1/2 cup nonfat yogurt
1 tablespoon lemon juice
1 1/2 tablespoons honey
1/4 teaspoon cinnamon

Steps:

  • 1. make the dressing by combining yogurt, lemon juice, cinnamon and honey 2. add carrots, raisins and pineapple 3. chill for at least 15 minutes before serving

Tips:

  • Choose fresh, crisp carrots: The fresher the carrots, the better the salad will be. Look for carrots that are firm and have a bright orange color.
  • Shred the carrots thinly: This will help them absorb the dressing better and make them easier to eat.
  • Use a variety of raisins: Different types of raisins have different flavors, so using a variety will add depth to the salad. Golden raisins are a good choice because they are sweet and chewy.
  • Make the dressing ahead of time: This will give the flavors time to meld together and will make the salad even more delicious.
  • Serve the salad chilled: This will help the flavors come together and will make the salad more refreshing.

Conclusion:

Weight Watchers No-Fat Carrot Raisin Salad is a healthy and delicious side dish that is perfect for any occasion. It is low in calories and fat, and it is packed with vitamins and minerals. The salad is also easy to make and can be prepared in advance. If you are looking for a healthy and refreshing salad, this recipe is a great option.
