- Add the eggs, 1 at a time, beating on low speed until blended; stir in the lemon zest.

- Pour boiling water into the roasting pan to come halfway up the sides of the springform pan.
- Bake until almost completely set, 30-32 minutes.

- 1. Preheat oven to 350 degrees.
- 2. To make the crust, mix the ingredients until crumbly. Pat into a 9-inch springform pan, forming the crust along the bottom and up the sides. Set aside.
