¾ cup halved, thinly sliced red onion
1 tablespoon fresh lime juice
1 ½ quarts seeded, cubed watermelon
¾ cup crumbled feta cheese
½ cup pitted black olive halves

1/4 cup seasoned rice vinegar
1 tablespoon sugar
sea salt, to taste
1 lime, juice
2 tablespoons olive oil
black pepper, lots
1 tablespoon garlic chives, sliced
1 small jalapeno, minced fine
1 -2 tablespoon fresh herb (Pick and mix your favorites of cilantro, basil parsley, thyme)
1 large cucumber, peeled, seeds removed and diced about 2 1/2 cups
5 cups cubed watermelon
1/2 cup thinly sliced scallion
1 tablespoon chopped pickled ginger, optional but yummy

  • Mix salad dressing ingredients in a bowl. Toss in the salad ingredients.

If you need a new summertime salad, you need to add this no-bake watermelon one to your menu. It's cool, creamy and refreshing with chunks of watermelon and pineapple in every bite. Just fantastic! We loved the crunchy texture that the pecans add to the salad. This will be a big hit at summer cookouts or potlucks.

1 box strawberry gelatin, 6 oz.
1 c boiling water
1 c cold water
3 c chopped watermelon in small pieces, remove seeds
1 can(s) crushed pineapple in juice, not drained, 8 oz.
1 c coarsely chopped pecans (some nuts can be added to the gelatin, if desired, but I prefer to add them all to the top of the finished dish)
1 pkg cream cheese, softened, 8 oz.
1/4 c sugar
1/4 c whole milk
1 pkg Cool Whip topping, 8 oz.

Steps:

  • 1. Combine gelatin and boiling water in a medium heatproof bowl. Stir until gelatin is dissolved, about 2 minutes. Add cold water & mix well. Chill in refrigerator until partially set, about 55 minutes.
  • 2. Add chopped watermelon and un-drained pineapple to gelatin mixture. Mix well. If you wish, some nuts can be added also. I prefer to put all the nuts on top of the finished dish. Spoon into 13x9 inch dish. Chill until set, about 1 hr.
  • 3. Place softened cream cheese in a medium bowl. Beat with an electric mixer until light and fluffy.
  • 4. Add milk and sugar to cream cheese. Beat until the mixture is smooth.
  • 5. Fold whipped topping into cream cheese mixture. Spread evenly over gelatin mixture.
  • 6. Sprinkle with pecans. Chill covered until serving time. Can be made the day before.

1 large cucumber, sliced
1/4 c apple cider vinegar
2 Tbsp olive oil, extra virgin
3 c watermelon, cut into small size chunks
3 large tomatoes, cut into small size chunks (same size as the watermelon)
1/4 - 1/3 c red wine vinaigrette dressing
1 pinch sea salt (large)
black pepper
1 Tbsp sugar
1/3 - 1/2 c Feta cheese (tomato and basil flavored)

Steps:

  • 1. Peel cucumber and slice in thin slices. Place in a bowl with a tight-fitting lid. Add vinegar and olive oil. Stir until combined. Add a couple of dashes of pepper. Close the lid and shake the bowl to distribute mixture and pepper. Refrigerate overnight.
  • 2. The next day, cut watermelon and tomatoes into small chunks. Place in a large bowl.
  • 3. With a slotted spoon, strain cucumber from vinegar mixture onto cutting board. Discard vinegar mixture.
  • 4. Cut cucumber slices in half and add to watermelon bowl.
  • 5. Sprinkle sea salt and sugar over watermelon mixture; mix until well combined.
  • 6. Add dressing and a couple of dashes of black pepper; stir until combined. Refrigerate for at least 2 hours before serving.
  • 7. 30 minutes before serving, stir in Feta cheese.
