GREEK-STYLE WATERMELON SALAD

Greek-Style Watermelon Salad image

It's not an immediately obvious combination - watermelon, cucumber, olives and feta - but one bite will leave you convinced that this savory-sweet summer salad is something truly special. The astringent punch of the olives and feta provides a sophisticated counterpoint to the watery mellowness of the melon and cucumber. With a hunk of bread, it's a lovely light lunch; with practically any grilled meat or fish, it's an ideal summer supper.

WATERMELON, FETA, ONION AND BLACK OLIVE SALAD

WATERMELON, FETA, ONION AND BLACK OLIVE SALAD image

Yield 8 people

Number Of Ingredients 10

1 (4- to 4 1/2-pound) piece watermelon, preferably seedless
3 large ripe tomatoes, preferably green or orange heirlooms, seeded and cut into 1-inch cubes
1 medium red onion
2-4 limes, depending on amount of juice
4 tablespoons chopped fresh mint
1 bunch fresh flat leaf parsley
3-4 Tbsp. olive oil
100 gm pitted black olives (optional)
250g feta
black pepper

Steps:

  • Peel and halve the red union and cut into very fine half-moons and put in a small bowl to steep with the lime juice for 4-6 hours, to bring out the transparent pinkness in the onion and diminish their rasp. Two limes' worth should do it unless they are not juicy and then you need to add more. Remove the rind and pips from the watermelon and cut into approximately 4cm triangular chunks. Cut the feta and tomatoes into similar sized pieces and put them both into a large, wide shallow bowl. Tear off sprigs of parsley so that is it is used like a salad leaf and add to the bowl along with the chopped mint. Tip the now glowingly puce onions, along with their pink juices over the salad in the bowl, add the oil and olives, then using your hands, toss the salad very gently so that the feta and melon don't lose their shape. Add a good grinding of black pepper and taste to see if the dressing needs more lime. Categories     Melons

Time 25m

Yield 8-10 , 8-10 serving(s)

Number Of Ingredients 9

1 small red onion
2 -4 limes, depending on juiciness
48 ounces watermelon, flesh- sweet ripe
9 ounces feta cheese
1 bunch flat leaf parsley, chopped (optional)
1 bunch mint, chopped
3 -4 tablespoons extra virgin olive oil
4 ounces pitted black olives
black pepper

Steps:

  • Peel and halve the red onion and cut into very fine half-moons and put in a small bowl to steep with juice of two limes (more if they are dried up) to bring out the transparent pinkness in the onions and diminish their "onion-ness.".
  • Remove the rind and seeds (if necessary) from the watermelon, and cut into approximately 1 1/2 inch triangular chunks or use a melon baller. Cut the feta into similar sized pieces and put them both into a large, wide shallow bowl. Add chopped mint, along with sprigs of parsley if desired.
  • Pour onions, along with their juices, over the salad in a bowl, add olive oil and olives, then using your hands toss the salad gently so that the feta and melon don't lose their shape. Add a grinding of black pepper and taste to see whether the dressing needs more lime.

Tips:

  • Choose a ripe and juicy watermelon for the best flavor.
  • Cut the watermelon into small cubes for easy eating.
  • Use a sharp knife to thinly slice the red onion to avoid overpowering the other ingredients.
  • If you don't have black olives, you can use kalamata olives or another type of brine-cured olive.
  • Fresh herbs, such as mint or basil, can add a pop of flavor to the salad.
  • Serve the salad immediately or chill it for later.

Conclusion:

This watermelon salad is a refreshing and flavorful side dish that is perfect for summer gatherings. The sweet watermelon, tangy red onion, and salty black olives are a delicious combination. The salad is also very easy to make, so it's a great option for busy weeknights.
