Number Of Ingredients 7

4 cups broccoli florets (from about 1 1/2 pounds broccoli)
1/4 cup red wine vinegar
1/4 cup honey
1 garlic clove, minced
3/4 cup thinly sliced red onion
6 tablespoons dried sweetened cranberries
2 bunches watercress, thick stems trimmed (about 5 cups)

Steps:

  • Steam broccoli until crisp-tender, about 4 minutes. Rinse under cold water; drain.

Tips:

  • For the best flavor, use fresh, young watercress and broccoli. Look for watercress with crisp, deep-green leaves and broccoli with tightly closed florets.
  • If you don't have an orange on hand, you can substitute another citrus fruit, such as a lemon or grapefruit.
  • To make the salad ahead of time, prepare the dressing and vegetables up to 24 hours in advance. Store them separately in the refrigerator and assemble the salad just before serving.
  • This salad is also delicious with grilled or roasted chicken or fish. For a vegetarian option, add some tofu or tempeh.
