6 cups green cabbage (approximately 1/2 head) or 6 cups savoy cabbage, thinly sliced (approximately 1/2 head)
1 cup shredded carrot
1/2 cup red cabbage, shredded (my addition)
4 tablespoons green onions, sliced
1/4 cup cilantro, minced (my addition)
2 1/2 teaspoons water
5 teaspoons wasabi powder
2 tablespoons rice wine vinegar or 2 tablespoons apple cider vinegar
2 teaspoons sugar (is using rice wine vinegar omit sugar)
1/3 cup mayonnaise
1/4 cup grapeseed oil or 1/4 cup vegetable oil
salt, to taste
black pepper, to taste
black sesame seed (optional)

Steps:

  • In a small bowl combine the water and wasabi powder. Mix until a paste forms. Set aside.
  • In another small non-reactive bowl whisk together the vinegar and sugar until the sugar dissolves.
  • Whisk in the mayonnaise and oil.
  • Add the wasabi paste, salt and pepper. Mix well.
  • Important: *Allow mixture to stand 10-15 minutes.*.
  • In a large salad bowl, combine the cabbage, carrots, scallions and cilantro if using.
  • Just before serving the salad, add the dressing and stir well to combine.
  • Garnish with a sprinkle of black sesame seeds, if desired.

1 tablespoon sucanat or brown sugar
1/2 teaspoon garlic salt
juice of one lime
2 tablespoon. pickle juice
1 tablespoon wasabi paste
1/2 teaspoon ground pepper
1 pound shredded green cabbage
1/4 cup shredded carrots
1/4 cup chopped fresh cilantro
1/4 cup red onion

Steps:

  • Mix together the dressing ingredients: soy yogurt, sugar, garlic salt, lime juice, pickle juice, wasabi paste, and ground pepper. In a large bowl, mix together the slaw: cabbage, carrots, cilantro, and onion. Pour dressing into slaw and mix well. Taste and adjust salt and pepper, if necessary. Refrigerate several hours before serving.

1 cup chopped red radish
1/2 cup chopped cucumber

4 (3/4- to 1-inch-thick) skinless white-fleshed fish fillets, such as Pacific cod or halibut (6 oz each)
1/2 teaspoon salt
1 1/2 teaspoons wasabi paste (from a tube)
1/2 cup mayonnaise
1 to 1 1/4 cups panko (Japanese bread crumbs)
For slaw
1/4 cup distilled white vinegar
1 teaspoon sugar
1/2 teaspoon dry mustard
3/4 teaspoon salt
1 seedless cucumber (usually plastic-wrapped)
8 oz shredded red cabbage (4 cups; from a 10-oz package)
Accompaniment: pickled ginger (sushi ginger)

Steps:

  • Prepare fish:
  • Put oven rack in upper third of oven and preheat oven to 400°F. Line a shallow baking pan with foil.
