Inspired by _Jamón Jamón_ In a desolate area of Spain, the fortunes of two families become intertwined through sex and a mutual longing for acceptance. In this 1992 black comedy, ham becomes a metaphor for life and death.

Yield Makes 4 servings

Number Of Ingredients 11

1 garlic clove
1/2 teaspoon salt
1/2 cup plus 2 tablespoons slivered blanched almonds (3 oz), toasted and cooled

3 tablespoons extra-virgin olive oil
1 tablespoon Sherry vinegar*
1/4 teaspoon hot pepper sauce such as Tabasco
1/8 teaspoon black pepper

Time 8m

Yield 1 serving(s)

Number Of Ingredients 8

1 bunch fresh kale, chopped (enough to cover your skillet)
1/8 red bell pepper, chopped
1/8 yellow onion, chopped
2 white button mushrooms, chopped
1 fresh garlic clove, minced
2 tablespoons organic butter
2 teaspoons quality balsamic vinegar
asiago cheese, to taste

Steps:

  • In a large non-stick skillet, melt butter and saute onions, pepper, and mushrooms until browned around edges.
  • Add balsamic vinegar to skillet, and let it cook out the vinegar a bit, just a good 5 second.
  • Reduce heat to low, and add in big bunch of fresh, chopped kale and garlic. Mix the contents until the kale is fully coated with the butter, balsamic, and veggies. The kale should just be slightly warm, not wilted.
  • Transfer the contents of the skillet onto a plate. Grate fresh asiago (I prefer the big shreds) over the top, if desired.
  • Enjoy.

Tips:

  • To save time, use pre-washed and chopped kale. If using whole kale, remove the tough stems and finely chop the leaves.
  • Massage the kale with olive oil and lemon juice to help tenderize it and enhance its flavor.
  • Use a flavorful cheese, such as Parmesan or Manchego, for the best results.
  • Toast the almonds in a dry skillet over medium heat until fragrant and golden brown, about 5 minutes. This will enhance their flavor and crunch.
  • If you don't have Serrano ham, you can substitute prosciutto or another type of cured meat.
  • Serve the salad warm, as soon as it's made. The warm dressing will help to wilt the kale and create a delicious, flavorful dish.

Conclusion:

This warm kale salad is a delicious and healthy side dish or main course. It's packed with營養, flavor, and crunch. The massaged kale is tender and flavorful, the almonds add a nutty crunch, the Serrano ham adds a salty savoriness, and the warm dressing brings it all together. This salad is sure to please everyone at your table.
