Categories     appetizer

Time 20m

Yield 4 servings

Number Of Ingredients 9

8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

WARM SPINACH AND SAUSAGE SALAD

Warm Spinach and Sausage Salad image

From the February/March 2006 issue of Everyday with Rachael Ray magazine. This is a simple salad that works as a main course for lunch, dinner or even breakfast. The magazine says that runny eggs make a richer dressing, but this salad tastes great with scrambled or hard-boiled eggs. I love the lemon-tang of the dressing.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 8

12 ounces bulk pork sausage
2 1/2 tablespoons olive oil
1 teaspoon lemon zest, grated
1 1/2 tablespoons fresh lemon juice
6 ounces Baby Spinach

  • Remove the sausage to a bowl with a slotted spoon and return the skillet to the stove.
  • Add the olive oil, zest and juice to the pan and, over medium-high heat, stir the mixture with a wooden spoon, scraping up any brown bits, for about 1 minute.

  • Add the spinach and use tongs to coat the leaves with the dressing.
  • Sprinkle the salad generously with salt and pepper.
  • Divide the spinach evenly among 4 bowls and top with the crumbled sausage.

Tips:

  • Use fresh ingredients. Fresh spinach, ham, and vegetables will give your salad the best flavor.
  • Don't overcook the spinach. Spinach wilts quickly, so cook it just until it is wilted. Overcooked spinach will be mushy and lose its flavor.
  • Use a good quality ham. A good quality ham will have a浓郁flavor and be tender. Avoid using processed or pre-packaged ham.
  • Don't skimp on the dressing. The dressing is what brings all the flavors of the salad together. Use a good quality dressing or make your own.
  • Serve the salad warm. Warm salads are more satisfying and flavorful than cold salads.

Conclusion:

  • Warm ham and spinach salad is a delicious and easy-to-make salad that is perfect for any occasion. It is a great way to use up leftover ham and spinach, and it is also a healthy and satisfying meal.
  • With its combination of sweet, savory, and tangy flavors, warm ham and spinach salad is sure to please everyone at your table. So next time you are looking for a quick and easy salad recipe, give warm ham and spinach salad a try.
