Number Of Ingredients 8

6 tablespoons (3/4 stick) cold unsalted butter, cubed, plus more, room temperature, for ramekins
1/3 cup sugar, plus more for ramekins
6 ounces bittersweet chocolate, chopped
2 large eggs plus 2 large egg yolks
1/4 cup all-purpose flour (spooned and leveled)
1/2 teaspoon coarse salt
Caramel Sauce for Chocolate Pudding Cakes, for serving

Steps:

  • Preheat oven to 350 degrees. Butter four 6-ounce ramekins, then coat lightly with sugar, tapping out excess. In a microwave-safe bowl, combine butter and chocolate. • In a large bowl, whisk together sugar, eggs, yolks, flour, and salt; add chocolate mixture and whisk to combine. Fill each ramekin three-quarters full with batter; place on a rimmed baking sheet and refrigerate 15 minutes.
  • Bake until center of a cake is soft but not wet when pressed, 27 to 30 minutes. Let cool 5 minutes. Serve cakes warm, topped with caramel and whipped cream.

Look out Mr. Reese because here comes an easy-to-make, decadent version of the peanut butter cup. Time 2h10m

Yield 12

Number Of Ingredients 12

1 cup all-purpose flour
4 eggs
½ cup milk
½ cup cold water
2 tablespoons butter, melted
1 cup smooth peanut butter, at room temperature
3 tablespoons confectioners' sugar
½ teaspoon vanilla extract
½ teaspoon rum-flavored extract
1 ⅓ cups milk chocolate chips
¾ cup 18% cream, at room temperature
½ teaspoon vanilla extract

Steps:

  • Blend flour, eggs, milk, cold water, and butter together in a food processor or blender until smooth, about 30 seconds. Scrape batter off the sides with a rubber spatula and blend 15 seconds more. Place batter in the refrigerator, at least 1 hour.
  • Beat peanut butter in the bowl of a stand mixer using the paddle attachment until smooth and creamy. Beat confectioners' sugar, 1 tablespoon at a time, into creamed peanut butter, mixing well after each addition. Add 1/2 teaspoon vanilla extract and rum-flavored extract and mix well. Store peanut butter filling in an air-tight container until 30 minutes before needed.
  • Heat a 10-inch non-stick skillet over medium-low heat. Remove the skillet from the burner; add a scant 1/4 cup batter to the center of the pan and swirl and tilt immediately to spread the batter evenly over the bottom of the skillet. Return the skillet to the heat. Cook crepe until edges appear slightly dry and pull away from the pan, about 1 minute. Gently slip a thin spatula under the crepe and gently flip. Cook the second side until lightly browned on the bottom, 45 to 60 seconds. Transfer crepe to a plate. Repeat until all the batter is used, separating each crepe with waxed or parchment paper.
  • Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Mix cream and 1/2 teaspoon vanilla extract into the melted chocolate; cook, stirring frequently, until chocolate sauce is thickened, about 20 minutes.
  • Spread peanut butter filling over each crepe and drizzle warm chocolate sauce over filling. Fold crepe in half or roll crepe around filling for Suzette-style crepes.

Yield Makes 8 servings

Crust
Nonstick vegetable oil spray
1 1/2 cups graham cracker crumbs
6 tablespoons (3/4 stick) unsalted butter, melted
Filling
1 quart chocolate ice cream, slightly softened until spreadable
2 cups coarsely chopped chocolate-covered graham crackers
1 1/2 cups marshmallow creme
2 cups mini marshmallows
Sauce
1/2 cup whipping cream
5 ounces imported milk chocolate, finely chopped

Steps:

  • For crust:
  • Preheat oven to 350°F. Spray 9-inch-diameter metal pie pan with nonstick spray. Mix graham cracker crumbs and melted butter in bowl to blend. Transfer to prepared pie pan. Press crumb mixture onto bottom and up sides of pan. Bake until crust is set and golden, about 11 minutes. Cool completely.
  • For filling:
  • Using offset spatula, spread half of softened ice cream evenly in crust. Sprinkle 1 cup chopped chocolate-covered graham crackers evenly over. Spread remaining ice cream over, covering graham crackers completely. Freeze until firm, at least 4 hours.
  • Drop marshmallow creme by tablespoonfuls over top of pie. Using moistened fingertips, spread in even layer, covering top of pie completely. Sprinkle mini marshmallows evenly over, pressing slightly to adhere. Cover and freeze until firm, about 4 hours.
  • For sauce:
  • Bring whipping cream to boil in heavy small saucepan. Remove from heat. Add chocolate; let stand 2 minutes to soften, then whisk until melted and smooth. (Pie and sauce can be made 3 days ahead. Keep pie frozen. Cover and chill sauce; rewarm sauce over low heat just until pourable before serving.)
  • Preheat broiler. Cover pie crust edges with foil collar. Broil pie just until marshmallows are golden brown, watching closely to avoid burning and rotating pan to brown evenly if necessary, about 2 minutes. Transfer pie to platter and serve immediately with warm sauce.

CHOCOLATE DECADENCE WITH WARM RASPBERRY SAUCE

Chocolate Decadence With Warm Raspberry Sauce image

Calling all chocoholics--this is your dessert! Add raspberry sauce and you're in heaven! This is definitely not for the calorie counters, but everyone needs an indulgence now and then! Originally from a local restaurant in Houston called Ouisie's Table--everything I've ever ordered there has been WONDERFUL. To keep the whipped cream stabilized, I always add about 1/2 t. unflavored gelatin to the cream before I whip it. Prep time does not include "setting up" time.

WARM CHOCOLATE PRALINE TART WITH CARAMEL, CHOCOLATE SAUCE image

Categories     Chocolate     Dessert

Yield 8 Slices

Number Of Ingredients 14

1 recipe Chocolate Tart Crust, recipe follows
6 tablespoons sugar
6 tablespoons light brown sugar
1 tablespoon all-purpose flour
3 large eggs, lightly beaten
1/4 cup dark corn syrup
1/4 cup light corn syrup
1 tablespoon dark rum
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
2 cups coarsely crumbled Chocolate Pralines, recipe follows
1 recipe Caramel Sauce, recipe follows
1 recipe Chocolate Sauce, recipe follows
1 recipe Vanilla Ice Cream, recipe follows, or good quality store bought ice cream

Steps:

  • On a lightly floured surface, roll the dough out to a 12-inch circle, about 1/8-inch thick. Gently fit the dough into a 10-inch fluted tart pan with a removable bottom, easing the pastry gently into the bottom and sides. Trim the edges of the dough so that they overhang slightly over the edge of the tart pan, then fold this excess dough over the sides so that the outer edges are almost twice as thick as the bottom of the crust. Press so that the edges are flush with the top of the pan. Cover and refrigerate for at least 30 minutes or overnight. Preheat the oven to 350 degrees F and position a rack in the center of the oven. Line the tart shell with parchment paper and pie weights, beans, or rice and bake until set and the edges just begin to firm up, about 15 minutes. Remove the parchment and weights and bake until completely set, 10 to 12 minutes. Cool completely on a wire rack. Reduce the oven temperature to 325 degrees F. To prepare the tart filling, combine the sugars and flour in a large bowl and stir to blend. Add the eggs, dark and light corn syrups, rum, vanilla, and salt and whisk to blend. Crumble the pralines evenly over the bottom of the prepared tart shell and pour the filling over the pralines. Bake until the tart is set, 1 hour and 10 minutes to 1 hour and 20 minutes. Cool completely on a wire rack. To serve, cut the tart into 8 slices. Spoon about 1 1/2 tablespoons of the Caramel Sauce onto the center of 8 dessert plates and arrange the slices on top. Drizzle each slice with about 3 tablespoons of the Chocolate Sauce and arrange a scoop of Vanilla Ice Cream to the side. Serve immediately.

WARM CHOCOLATE TART WITH RED WINE SAUCE

Warm Chocolate Tart With Red Wine Sauce image

This romantic tart comes together in no time at all with the use of a premade tart shell. Feel free to make your own of course, but I stick with the premade ones on account of being pastry-challenged. As far as a rich and indulgent dessert, you cannot go wrong with warm chocolate and red wine! Perfect for valentines day, or any day that you just want to treat yourself and the ones you love.

Provided by LilPinkieJ

Categories     Tarts

Time 30m

Yield 8 serving(s)

Number Of Ingredients 7

8 ounces bittersweet chocolate, finely chopped
3/4 cup heavy cream
1/2 cup whole milk
1 large egg, lightly beaten
1 (9 1/2 inch) tart shells (prebaked)
3 cups sugar
1 cup red wine

Steps:

  • For the Tart:.
  • Preheat the oven to 325°F.
  • Place the chopped chocolate in a medium bowl and set aside.
  • Combine the cream and milk in a medium saucepan, and bring to a boil over medium-high heat. Pour the hot cream mixture over the chocolate. Allow to stand for 30 seconds to melt the chocolate, then whisk until the chocolate is completely melted and the mixture is smooth. Allow to cool for 10 minutes.
  • Whisk the egg into the chocolate mixture. Pour the filling into the prebaked tart shell.
  • Bake the tart for 8 to 10 minutes, until the edges of the filling are set; the center will still be soft. Cool the tart on a wire rack for 10 minutes and served warm.
  • For the Red Wine Sauce:.
  • Put the sugar in a deep sauce pan. Stir constantly on medium high heat until sugar liquefies and turns mahogany brown. Add the red wine and whisk until sugar is dissolved and wine is incorporated. Chill. Serve over tart.

Tips:

  • Use high-quality chocolate: The better the quality of the chocolate, the better the sauce will taste. Use a chocolate with a high cocoa content (at least 70%) for a rich, decadent flavor.
  • Chop the chocolate finely: This will help the chocolate melt smoothly and evenly.
  • Use a heavy saucepan: A heavy saucepan will help to distribute the heat evenly and prevent the chocolate from burning.
  • Heat the chocolate slowly: Overheating the chocolate can cause it to seize up and become grainy. Heat the chocolate slowly over low heat, stirring constantly.
  • Add the cream and butter gradually: This will help to prevent the chocolate from curdling.
  • Stir the sauce constantly: This will help to prevent the chocolate from burning and will also help to create a smooth, creamy sauce.
  • Season the sauce to taste: Add a pinch of salt to enhance the flavor of the chocolate. You can also add a splash of vanilla extract or cinnamon for a more complex flavor.

Conclusion:

This warm chocolate sauce is a delicious and versatile dessert topping. It can be served over ice cream, cakes, brownies, or even fruit. It is also a great addition to coffee or hot chocolate. With its rich, decadent flavor, this chocolate sauce is sure to be a hit with everyone who tries it.
