2 cups sugar
3/4 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1-1/2 teaspoons baking soda
1 teaspoon salt
3 cups finely chopped peeled tart apples
TOPPING:
2 tablespoons butter, softened
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 cup sweetened shredded coconut
1/3 cup chopped walnuts

Steps:

  • In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, cinnamon, baking soda and salt; gradually beat into sugar mixture (batter will be thick). Fold in apples. Spread into a greased and floured 13-in. x 9-in. baking pan. , For topping, beat the butter, sugar and cinnamon in a small bowl. Stir in coconut and walnuts; mix well. Sprinkle over the batter. Bake at 350° for 35-40 minutes or until a toothpick inserted in center comes out clean.

2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
150 grams (3/4 cup) caster sugar or granulated sugar
1 cup (approximately 1 large) red apple, peeled and roughly chopped
2 large eggs
1 teaspoon vanilla extract
120 ml (1/2 cup) vegetable oil
120 ml (1/2 cup) Greek yogurt
50 grams (1/4 cup) caster sugar or granulated sugar
1 teaspoon ground cinnamon
1 tablespoon butter, melted
30 grams (1/4 cup) icing sugar or powdered sugar, sifted
1-2 tablespoons milk

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.
  • In a large mixing bowl, add flour, baking powder, baking soda, salt and sugar. Add chopped apple and stir briefly to combine.
  • In a separate bowl, add eggs, vanilla, oil and yoghurt. Whisk briefly just to break up the egg yolks.
  • Add wet ingredients to dry ingredients and gently mix with a wooden spoon until combined - but be careful not to over mix. Spoon batter into prepared tin.
  • To make cinnamon topping, combine cinnamon, sugar and butter. Mix together until lumpy and wet. Sprinkle over cake batter.
  • Bake cake for approximately 30-35 minutes or until a skewer inserted into the middle comes out clean. Transfer cake to a wire rack to cool completely.

1 teaspoon baking powder
75 g butter, at room temperature
150 g caster sugar
1/2 grated lemon, zest of
1 large egg
150 ml milk
2 large bramley cooking apples (500g or 1 lb 2 oz)
1/2 lemon, juice of
25 g butter, melted
25 g chopped pecans (optional)
50 g granulated sugar
1 teaspoon ground cinnamon

Steps:

  • Generously butter and line a 12 X 8 X 1 inch baking tin. Preheat oven to 180*C/350*F.
  • Peel, core and thinly slice the apples and toss in the lemon juice. Set aside.
  • Sift the flour and baking powder into a bowl. Add the butter pieces and rub in until the mixture resembles fine crumbs. Stir in the caster sugar and the grated lemon zest.
  • Combine the egg and milk, mixing with a fork to break up the egg. Add to the dry ingredients, stirring with a wooden spoon to combine, then beat for 1 minute to get a soft cake batter. Turn the mixture into the prepared tin and spread evenly over the base.

  • Preheat the oven to 200c/ gas 5
  • Add the sugar and butter together in a bowl and mix together until both are combined and nice and fluffy
  • Add the flour to the butter/sugar mix and combined together until it forms a gooey mixture
  • Add the one egg and stir into the mixture. Add the other egg and stir all together. The mixture should be slight runny but still have a slight stiffness
  • Add the cinnamon to the mix and stir well then add the peeled and chopped apple to the mix and stir together
