1/2 cup flax seed
3/4 cup all-purpose flour
1 cup whole wheat flour
1/4 teaspoon morton lite salt (optional)
1/4 cup sugar (Less for healthier muffins)
1 teaspoon cinnamon
2 teaspoons baking powder
3 egg whites
2 tablespoons canola oil
3/4 cup soymilk or 3/4 cup milk
1/2 cup chopped walnuts (more if you want)
1 large apple, diced (more if you want)

Steps:

  • Preheat oven to 400 degrees.
