Time 35m

Yield 1 serving

Number Of Ingredients 7

3 frozen unsweetened strawberries
2 tablespoons light chocolate syrup, divided
1 standard-sized waffle cone bowl with about 50 calories
1/2 tablespoon low-sugar strawberry preserves
1/2 cup fat-free chocolate ice cream
1/4 cup raspberries
2 tablespoons fat-free whipped topping (from an aerosol canister)

Steps:

  • Put frozen strawberries in a microwave-safe bowl, and microwave until thawed, about 25 seconds. Do not drain excess liquid. Set aside.
  • Pour 1 1/2 tablespoons of chocolate syrup into the waffle bowl, tilting the bowl from side to side so the syrup coats as much of the inside as possible (sides too!). Freeze for 30 minutes, or until syrup has solidified.
  • To the bowl of strawberries, add preserves and mash with a fork, until you have a chunky strawberry sauce.
  • Remove waffle bowl from the freezer and place in a dish. Scoop ice cream into the waffle bowl. Top with strawberry sauce and 1/2 tablespoon of chocolate syrup, and then finish it all off with raspberries and whipped topping. Enjoy!

Steps:

  • Preheat oven to 200C. Place half the waffles in a deep microwaveable dish and sprinkle half the chopped white chocolate and half the raspberries - repeat layers. Place in microwave on high for 3 minutes (or until raspberries have defrosted)
  • Combine sugar and flour in a bowl. Add sour cream, eggs and vanilla essence. Whisk and spoon evenly over top of raspberries
  • Bake 30-35 minutes or until golden brown and set in centre. Cool for 10 minutes, sprinkle with icing sugar and serve with ice cream if desired.
  • Equally yummy served cold the next day!!

Tips:

  • Use fresh berries. Fresh berries will give your sundaes the best flavor. If you don't have fresh berries on hand, you can use frozen berries. Just be sure to thaw them before using.
  • Make your own waffle batter. Homemade waffle batter is easy to make and it tastes much better than store-bought batter. You can find a recipe for waffle batter in the article above.
  • Cook your waffles until they are golden brown. This will ensure that they are cooked through and have a crispy exterior.
  • Don't skimp on the toppings. The toppings are what really make these sundaes special. Be generous with the ice cream, whipped cream, and berries.
  • Serve the sundaes immediately. Waffles are best when they are served hot and fresh. So, don't wait to dig in!

Conclusion:

Very berry waffle sundaes are a delicious and easy-to-make dessert that is perfect for any occasion. They are also a great way to use up leftover waffles. So, next time you have a waffle craving, be sure to try this recipe. You won't be disappointed!
