THE BEST BROCCOLI-CHEDDAR SOUP

The Best Broccoli-Cheddar Soup image

This outstanding broccoli-cheddar soup is rich, cheesy and packed with flavor. We decided to puree just over half the soup which makes it extra thick and creamy, and left the remainder chunky so there are broccoli bits in every bite. Gild the lily with more shredded cheese on top to satisfy your comfort food craving.

Time 50m

Yield 4 servings

Number Of Ingredients 13

4 tablespoons unsalted butter
1 medium yellow onion, diced
1 large carrot, diced
2 cloves garlic, minced
1/4 cup all-purpose flour
2 cups half and half
4 cups low-sodium chicken broth
4 cups broccoli florets (from about 1 head)
2 bay leaves
1/4 teaspoon freshly grated nutmeg
Kosher salt and freshly ground pepper
1 large russet potato (about 8 ounces)
8 ounces mild yellow Cheddar, shredded (about 2 cups), plus more for serving

Steps:

  • Melt the butter in a large saucepan or Dutch oven over medium-high heat. Add the onion, carrot and garlic and cook, stirring occasionally, until just tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, broccoli, bay leaves, nutmeg, 1/2 teaspoon salt and few grinds of black pepper Bring to a boil, then reduce to medium-low and simmer, uncovered and stirring occasionally, until the broth has thickened and the broccoli is very tender, about 15 minutes.
  • Meanwhile, prick the potato all over with a fork and put on a microwave-safe plate. Microwave on high until tender, flipping halfway through, about 6 minutes. Let cool, then peel. Use a fork or potato masher to mash until crumbly.
  • Reserve 2 cups of the soup in a liquid measuring cup and discard the bay leaves. Let the remaining hot soup cool for 5 minutes or so, then transfer it to a blender, filling no more than halfway. Add the mashed potato. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters, and pulse until very smooth.
  • Stir the pureed soup and reserved 2 cups of soup back into the pot. Whisk in the cheese until melted and smooth. Season with salt and pepper. Ladle into serving bowls and top with more shredded Cheddar.

VERMONT CHEDDAR BISQUE

Vermont Cheddar Bisque image

The October 11-17, 2009 issue of the American Profile in my Saturday newspaper insert was entitled "Soup's On" A former Navy Seabee (Ken Haedrich) builds hearty soups for the fall and this is one of the soups that looked delicious to me. The recipes are from Ken's book Soup Makes the Meal (Harvard Common Press, 2001). Ken says about the recipe: "No one has ever asked me, but I've thought about what I'd like to eat for my last meal. I'm pretty sure it would be Welsh rarebit on toast points. This soup is just a step or two removed from that dish. The flavor is virtually the same; it's just thinner, though still quite full-bodied".

Time 34m

Yield 5 serving(s)

Number Of Ingredients 11

1 1/2 cups peeled potatoes, cut into 1/2-inch cubes
2 cups low sodium chicken broth
1/4 cup unsalted butter
1 cup onion, finely chopped
3 tablespoons all-purpose flour
1 1/2 cups 2% low-fat milk
2 teaspoons Dijon mustard
1 1/2 cups extra-sharp cheddar cheese, shredded
1/4 teaspoon salt
fresh coarse ground black pepper
1/8 teaspoon cayenne pepper

Steps:

  • Combine potatoes and broth in a large stockpot. Cover and bring to a simmer. Cook until potatoes are tender, about 8 minutes. Remove from heat.
  • Melt butter in a large skillet over medium-low heat. Add onions and cook, stirring, until translucent, 6 to 8 minutes. Add flour and cook, stirring, 1 minute. Stir into potato mixture. Cook over medium heat, stirring, until thickened.
  • Add milk and cook, stirring, about 8 minutes. Do not boil. Remove from heat and stir in mustard and about half the cheese. Stir until melted. Add remaining cheese. Season with salt, black pepper and cayenne pepper.

Tips:

  • Use a sharp cheddar cheese. This will give the soup a more浓郁的风味。
  • Shred the cheese yourself. Pre-shredded cheese contains additives that can make the soup grainy.
  • Use a good quality vegetable broth. This will give the soup a richer flavor.
  • Don't boil the soup. Bring it to a simmer over medium heat and then reduce the heat to low. Simmer for at least 30 minutes, or until the cheese is melted and the soup is hot.
  • Season the soup to taste. Add salt, pepper, and cayenne pepper to taste.
  • Garnish the soup with fresh chives or parsley. This will add a pop of color and flavor.

Conclusion:

Vermont cheddar bisque is a classic soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste. With its sharp cheddar cheese, creamy texture, and flavorful broth, Vermont cheddar bisque is sure to be a hit with your family and friends.
