1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2-1/2 cups quick-cooking oats
1 package (11-1/2 ounces) milk chocolate chips
2 cups chopped walnuts
1-1/2 cups All-Bran cereal

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the remaining ingredients. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. I got the recipe from the 50th Anniversary Best of the Bake-Off Cookbook. Cook time includes refrigeration time and cook time for 2 batches of cookies. These can easily be made vegan by using a vegan egg-replacer like Ener-G. Sometimes sugar is not vegan so you could substitute raw sugar, if desired.

3/4 cup vegetable oil
2 egg whites or 1/4 cup egg substitute
1/4 cup molasses
1 1/2 cups whole wheat flour
1 1/2 cups rolled oats
1/2 cup oat bran or 1/2 cup wheat bran
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon salt
1/4 teaspoon clove
1/4 cup sugar

Steps:

  • In a large bowl, mix the oil, egg, 1 cup sugar and molasses and mix very well.
  • In a medium bowl, mix together the flour, oats, bran, baking soda, cinnamon, ginger, salt and cloves.

1/3 cup brown sugar
1 1/2 teaspoons Sweet'N Low brown sugar substitute
1/2 cup egg (2 to 3 medium)
1 teaspoon vanilla
1 cup all-purpose flour
1 cup oat bran
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/3 cup raisins
1/4 cup water

Steps:

  • Cream margarine and sugar together at medium speed until light and fluffy.
  • Add sugar substitute, eggs and vanilla to creamed mixture, mix at medium speed for 30 seconds.

1/4-1/2 cup margarine
1/3 cup sugar
1 tablespoon sugar substitute
1/2 cup egg white (3 to 4 medium)
2 teaspoons vanilla
2 cups all-purpose flour
1/3 cup cocoa
1 teaspoon baking soda
2 tablespoons dry buttermilk
1/2 teaspoon salt
2/3 cup miniature chocolate chip

Steps:

  • Mix oat bran and water, let stand at room temperature for 30-45 minutes .
  • (This timing is very important.) Cream margarine, sugar and sugar substitute together until light and fluffy.
  • Add egg whites and vanilla and mix at medium speed for 30 seconds Scrape down the bowl Stir flour, cocoa, soda, dry buttermilk and salt together to blend well.
