1/2 c Venison Bologna, Finely Chopped
2 pkg cream cheese, room temperature
1/8 tsp chives, finely chopped
dash(es) garlic powder
Walnuts or Pecans, Finely Chopped

Steps:

  • 1. Combine in a bowl, Bologna, cream cheese, chives and garlic powder.
  • 2. Once combined, roll into a ball form, roll in walnuts or pecans if desired. Then roll in plastic wrap and place in fridge for atleast 2 hours.
  • 3. Really nice cheese ball with crackers or a nice crusty bruchetta bread.

1/2 lb grated cheddar cheese
8 oz cream cheese, room temperature
1/2 c mayonnaise
2 Tbsp horseradish
assortment of crackers

Steps:

  • 1. Combine salami, cheddar cheese, cream cheese, mayo and horseradish. Form into a ball; serve with crackers. Better if made a few hours ahead to let flavors meld together.

1 medium onion, chopped
1 clove garlic, minced
1 (28 ounce) can whole tomatoes, mashed
18 ounces tomato juice
1 (15 ounce) can tomato sauce
1 (15 ounce) can pinto beans
1 tablespoon Worcestershire sauce
1 teaspoon basil
1 teaspoon pepper
2 eggs
1/2 cup grated parmesan cheese
1/2 teaspoon thyme leaves
1/2 cup finely rolled saltine crumbs
4 cups shredded cabbage

Steps:

  • Brown meat in margarine and set aside to cool.
  • Place onion, garlic, tomatoes, tomato juice, tomato sauce, beans, Worcestershire, basil and pepper in large covered kettle.
  • Bring to a boil, cover and simmer for 30 minutes.
  • Combine eggs, Parmesan, thyme, crackers and browned venison.
  • Mix well.
  • Shape into 1-inch balls.
  • When soup has simmered for 30 minutes, stir in cabbage and drop in venison cheese balls.
